This is a great article published by NPR detailing the struggles winemakers, especially cabernet sauvignon winemakers, are having with extreme summer temperatures. In the latter days of summer, when cabernet grapes typically ripen, the extreme heat causes them to overripen, producing a grape too sweet for most consumers. And for cab growers, that is no good. So, farmers and researchers are exploring ways to combat the heat. Some are planting grape varieties from hotter climates, while others are employing water misters. Want to know another avenue to battle the sun? Shade canopies. Researchers at UC Davis recently ran an experiment on how shade canopies affect cabernet grapes. They found that cabernet grapes grown in certain shady conditions produce grapes with a "higher concentration of color, aroma, and flavor quality markers."
