An evening that celebrates not only sustainable seafood, cooking methods and seasonal eating, but also pays homage to the dedicated fishing communities that make it all possible and to which we have built strong and lasting connections. This menu has been curated to highlight seasonal and super-sustainable, native fish and shellfish. We’ll explore the fascinating world of oysters and mussels, true eco-heroes of filtering our oceans - the story of where our adventures began over 20 years ago with the Miet oysters and savour our stunning Shetland mussels, pickled, with homemade, liquor-mopping soda bread. We’ll celebrate the return of wild bass season, with sparkling, just-landed, rod and line fish from our boats on the South Coast and discover the meaningful impact it has on our local fishing communities and their sustainability. I spoke with a restaurant owner who was frantically cutting up salmon after a 3 week shortage. They received their shipment all the way from Norway. If you like salmon, what does that mean? Short term, higher prices for your salmon avocado rolls. Salmon will be harder to source. In the longer term, free food from the ocean will become harder and harder to come by and consumers will need to adapt. To quote my husband in all of his infinite wisdom, “We’ve had a good run”. Should you panic? Up to you. You can remain observant and notice the changes to our planet and how they affect our economy and consumption. You can make a change and create your goals according to the world you want to live in. If you are a restaurant owner, you should start thinking about how you can diversify your menu to accommodate for these changes. There are tools available to you, that can help you play around with pricing and find creative ways to shift pricing. I sell one of them. Unfortunately, food shortages and change will keep happening as the climate continues to change. Sustainable source of food is going to be even more important. I would expect that plant based sector will capitalize on the changing world order. We’ve had an amazing run of abundant availability of food.
