Upselling can feel slimy but it can be dually beneficial if utilized correctly. My wife and I went for a meal on the weekend and our waiter was fantastic. Not only was he prompt, his suggestions were customized and improved our experience. He didn't "upsell" He suggested items that enhanced our meal. Yes, adding burrata to our charcuterie board increased our average check but it was a significant improvement that we were happy to pay for. The key to upselling is finding incremental menu elements that will genuinely improve the guest experience. Adding garlic mayo to a side of fries seems small, but a $2.50 add to a $32 average check is a 7.8% increase. My recommendation - Have each of your servers answer this question: What incremental item do YOU add to a meal that makes it way better? Then ask them to sell 10 of those during their shift. It's a small, specific objective that they can genuinely get behind. Are you taking advantage of the five dollar fast food meals? McDonald’s, Burger King, and Wendy’s are competing for your fast food dollars as they have all introduced new value items. Burger King has a five dollar Your Way meal that is 30% below the normal price. Wendy’s has also launched a three dollar breakfast deal that started in May. These new value meals have been introduced because of a study that shows 78% of respondents to a Lending Tree survey said they now see eating fast food as a luxury and 65% were shocked by the price of their orders. It would appear that McDonald’s with 13,000 locations in the US (more than twice as many as Burger Kings and Wendy’s) is more likely to weather the price storm and perhaps even profit. Based on 2023 numbers, the average McDonald’s restaurant has around $4 million in sales almost twice as much as Wendy’s at $2.1 million and more than double Burger King’s $1.6 million per store. Did you know that most bars lose money on their kitchen? So why even sell food? It all goes back to customer acquisition. Just like my post about $1 beers. A lot of people won't consider a bar if they don't have some type of food offered. So very simply, less food sales means less beverage sales and that means less profitability. With more than 40% of Aussies now preferring to snack rather than eat a proper meal at least once a week, foodservice businesses are having to adjust their menus to cater for this format of dining.
