ACHIEVING SUSTAINABILITY BY EATING LOWER ON THE FOOD CHAIN by Jesse Trushenski Sustainability experts have suggested eating less meat can help to reduce carbon footprints and environmental impacts. This is because when you eat meat, you are effectively consuming the food on your plate and all the food the chicken, pig, or fish ate before they became your dinner. We might call it the food chain, but scientists call them trophic levels—see call-out box—and eating lower trophic level foods is better for the environment. In the wild, trout and salmon eat other fish, so their trophic level is 4. But fed a carefully balanced diet of plant and animal ingredients, our fish have a trophic level that’s much lower. Our fish and customers are achieving greater sustainability by eating less on the food chain. #management #innovation #futurism #seafood

1/3 of the world’s emissions come from food systems. 1/3 of the world's food is never consumed, wasting energy, water and valuable resources. Hunger is on the rise and the world is becoming more food-insecure. The current state of the world’s food system is inequitable and contributes to loss and degradation. I am joining a panel of experts to emphasize the connection between climate and sustainable food systems, identify existing barriers, and discuss the role of governments and technology in addressing these challenges. ✅ From my perspective, I want to highlight the significant role that restaurateurs and chefs play in unlocking the potential of new sources for food, exploring less & better meat menus, and wild and foraged ingredients. ✅ Through storytelling, we (restaurateurs and chefs) can raise awareness about the issues contributing to the failure of our food systems, promote locally grown, seasonal produce, and climate resilient crops, look to nature for wild ingredients, and advocate for better environmental and ethical practices among growers and suppliers. ✅ Reducing food waste and fostering a shift in behavior among us in the food and beverage industry and consumers alike is also crucial.
