Loving the episode so far! The issue that Upside and the industry segment, in general, are tackling is very important for humanity to find a sustainable future in food consumption. While going vegan is an ideal that I have been holding to for the last 9 years it's not something that the majority of people will be adopting any time soon. Keep up the great work.

It was refreshing to hear transparency as a recurring theme as the status quo is incredibly opaque and it's the opacity that allows it to persist. In spite of the moonshot nature, the path of choice (vs behavior) strikes me as the most effective, impactful, and on the whole most viable way to approach the mission. I'm reminded of a previous Rich Roll Podcast episode… the one with Tanya O'Callaghan where she said veganism is the closest thing we have to a panacea for health, the environment, and interest of our future generations. Sure seems like cultivated meat is a practical way to get there, capitalizing on market forces (esp increasing demand and the level of mindfulness the majority of people consume). This area of innovation is exciting! Definitely a must-listen episode.
