Yesterday 19th February 2024, I officially started cohort 3 of my Food safety trainings. I am excited that out of the Expected 20 participants the number rose to 25. Day one was all about introduction to Food safety systems. What stood out for me was a question by one student who inquired earlier in the day. " What is the benefit I will get as a Food science student after the training?" I know she isn't alone. Most of the people are hesitant to pursue self improvement. For the sake of the many who want to know let me get deeper and expound on the answer to her question. After my graduation, I was out with the power to read. I was out to venture into the wide Food industry. I made lots of applications. I know most of you can relate. You are just out of college and you need employers to notice you so you sent random emails to Hrs asking them to consider you for job openings. I was invited for an interview and I found myself with a classmate. They only needed one person for the Quality post advertised. Armed with similar qualifications, it was a tie and soon the tie breaker came, who among the two of us has an extra thing to bring to the table. This happens in most cases. I was lucky I had certificates of participation in various food safety expos. one was that of AFMASS- Africa Food Manufacturing And Safety Summit, another was from FOSTTEP Kenya. I was lucky, why? I had something to add on top of my degree. It was then that I decided it was time to look for this extra (tie breakers). I have went ahead and get ISO 22000:2018 Certification as a Lead Auditor. I have attended several food science related events. The latest being East Africa Regional Network of Excellence in Dairy Training (EARNED). why am I doing this? I know one day it will come handy. secondly it is at such events I get to Network with Industry players. During the EARNED Project workshop I met several influential and industry players including Chau Dang Van. So if you are an aspiring Food scientists or already in the introduction stage in the industry. This is for you. You may know that Dr Matthew Wilson from the University of Adelaide and I had the privilege of presenting a food safety webinar for the International Food Safety and Quality Network based in England. It's not every day that you have the opportunity to engage with the food industry from around the globe, so it was very pleasing to have 1500 registrations from the US, UK, South Africa, Australia, India, Greece, Maldives, UAE, Ethiopia, and beyond join us for this session. We wanted to make a difference and offered a practical and visual presentation. Our discussion delved into various aspects of education and training, focusing on on-the-job approaches to make training stick and elevate standards in the broader food industry. Around 40 minutes were spent addressing questions and exchanging insights. Key takeaways from our session: Food Safety Culture: Emphasised the importance of fostering a strong food safety culture within food businesses. Clear and Open Communication: Highlighted the transformative impact of clear and open communication and quality training in enhancing food safety practices across a food business and the industry. Commitment to Training: Explored why a genuine commitment to training from both management and employees is essential for achieving successful outcomes in food safety initiatives. Structured Workplace Learning: Discussed the benefits of implementing a structured workplace learning approach to foster a skilled and capable workforce dedicated to maintaining high food safety standards. A great article and a fresh take on the concept of Food Safety "Culture", moving away from the standardised institutionalized notion that a Food Safety Plan and system is the be all. There's an over-reliance in much of the hospitality industry that these systems are "set and forget", most, if not all venues I've taken over in 2 decades of being an Exec, Head, or Sous chef hadn't seen their FSP since the last audit, most venues simply didn't and don't see it as a means to create structure and reduce running costs. Now within the training industry, I'm yet to work in an RTO that takes Food Safety & WHS training as seriously as I do. Every RTO has seen the way I do things in these key, core Units of competency - the way I create a culture of awareness, empowerment and appreciation for all aspects of code, legislation and subsequent ramifications for non compliance - and they've been astonished that it is possible to teach this stuff in a way that is enjoyable, that sticks and that is demonstrable by their students (all but Westin College in Northbridge who literally accepted students would have to use rotten ingredients, and moulded chopping boards amongst other failures) I think this is a great read and an even better share for your teams, to remind them of the importance of thinking of Food Safety out of the box. #foodsafety #chef #kitchen #rto #asqa

When I am not writing about Food Safety Culture, I am reading about it. Recently I ran across an article on the 7 S's of food safety. I love mnemonics, acronyms and alliteration and these really resonated with me, and I wanted to share and expound on them briefly because these pillars form the foundation of a successful journey in food safety culture and if followed, like a treasure map, can lead to gold. 1. Skills – We must equip our teams with the necessary skills and knowledge to handle food safely. Continuous training ensures competence, contributing to the success of food safety practices. 2. Style - As leaders we need to adopt a management style that prioritizes and promotes a culture of food safety. Leadership commitment sets the tone for the entire team to follow suit, fostering a safe environment. 3. Systems - Implement robust systems for food safety protocols. Having well-defined procedures and processes ensures consistency, reducing the risk of foodborne illnesses and contributing to overall success. 4. Strategy - Develop a strategic approach to food safety. Anticipate potential risks, plan preventive measures, and adapt strategies to evolving challenges in the food industry for sustained success. Risk assessments are important. 5. Structure - Organize your programs & workflow structure with food safety in mind.
