In our latest podcast episode, we talk to legendary chef Dan Barber of Blue Hill At Stone Barns. In this first in-person interview since 2020, Dan discusses with our co-founder Cora Hilts his passion for sustainable food and dining. Dan goes into detail about sourcing seeds, nose-to-tail eating and how restaurants have the power to change how food is grown all over the world. “Dan and I discussed the fact that just FOUR companies globally now own more than 60% of the world’s seed crops…meaning the vast majority of our food sources are controlled by less than a handful of corporations. And these companies are agribusinesses like Bayer, who engineer these seeds to be genetically modified and only able to grow when a certain pesticide (that Bayer happens to make) can be sprayed liberally upon them from the moment they are put in the soil. Meaning our food contains chemicals from it’s inception in many cases. As disease soars throughout so many populations, I can’t help but think about the connection here to the amount of pesticides, toxic fertilizer and the literal roots of our food being hit with chemicals before it even grows. Not to mention what it means to have businesses hold the rights to something as fundamental as the seeds that grow our food.” – Cora Hilts https://lnkd.in/ep-PNMqf

Head to the Beans is How site for their annual report. “Over 91 organisations from diverse backgrounds have committed to recognising and promoting the power of beans to solve some of the world’s most urgent problems; hunger, malnutrition, climate change and more. This first annual report is a testament to the collective effort, dedication and energy of our many partners and supporters.” Paul Newnham, Executive Director & Chief Bean Officer of the SDG2 Advocacy Hub Many farmers use beans as an important part of their crop rotation because nitrogen is an essential nutrient for growing healthy, productive plants. Legumes can improve soil health naturally without the need for synthetic fertilisers. Looking for a recipe: Keep it green and try smashed fava beans on toast - it makes a great swap for avocado on toast. #beansishow https://lnkd.in/dvP7Y9zZ

"I remember when I was a kid, I'm now 55, my mother always asked me to go shopping for her and she always gave me a hundred shillings. So, I bought my meat and my sausages and a little bit of cheese. And then the rest, the 20 shillings, was so much and you could nearly buy the whole vegetable shop. Prices of vegetables were so cheap at that time. And animal products were so expensive, you know? And now when you look at the market, when you go to a shop, chicken is cheaper than a kohlrabi. It’s crazy. It’s kind of scary how the price system has gone out of control.” 🥬🍗 Listen to Matthias Krön, President of the Donau Soja Organisation, go into its mission and its pivotal role in European soy production. Discover the intricacies of protein production and consumption in Europe, and the potential for transitioning from imported soy to European soy to substantially reduce CO2 emissions. Gain insights into how our agricultural system has inadvertently fostered a culture of overconsumption. 🎧 👉 https://lnkd.in/ef9WS5EC #Podcast #PlantBreeding #Soy #DonauSoja #DonaoZoya #EuropeanSoy #Sustainability

Cultivated Meat Insider Reveals The Realities of Cultivated Meat in Today's World - Leo Groenewegen x Tomorrow’s Bites OUT NOW! 👉 https://lnkd.in/eKPqeGUw Is cultured meat a revolution or a risk? That is the main question people have. And we get it because, on the one hand, its development is appreciated in countries like Singapore and the USA, while on the other side of the world, countries like Italy and Romania are already putting regulations in place to ban it. So to bridge the gap, we took the latest episode of 2023 for this topic and had a conversation with Leo Groenewegen, one of the experts on cultured meat. He has been involved from the start of its development and has been working in this field for several years. We delved into topics like: - What exactly is cultivated meat? - How far have we come in its development? - Are there any risks for human health? - What will be the role of traditional farmers if cultivated meat takes centre stage? - What are the current challenges? - Where and how will we as consumers find cultivated meat on our plates? This conversation made everything around cultivated meat clearer for us, from consumers to traditional farmers. It also shed light on the challenges and opportunities of cultivated meat. This is the talk for everyone interested in the biggest innovation of recent years in the food scene and the people more reluctant towards this development. Food must not be a problem but a solution. 🙏 #cultivatedmeat #foodrevolution #sustainable #agriculturalInnovation #foodtech #foodscience
