~Perseverance pays~ Our first meeting with Barista Coffee Company Limited had bombed. Our product was great, but our presentation was not spot on. We had gone in product first. But that is not how you close key clients. We need to go, solution first. We reconnected in a couple of months. This time we played it on the front foot. Understood their requirements well. Asked for a brief. Took our time, did our homework. Did multiple trials with their current systems so when we do go in for that presentation, decision-making becomes painless for them. We finally partnered with them on their Winter menu. This is a new-ish category for us. Shakes and coffee add-ons. We are already having so much fun though. And if I may say, their team really knows their audience so well. This kind of clarity is rarely seen. Makes it that much easier for us to zero down on what to pitch. Most importantly I learn so much in the process. That's my biggest personal win. And Summers are going to be even more killer - I promise. I like to go where it all began, the place where a famous dish was invented. And there's one thing I notice time and again that still never fails to astonish me. They tend to be awful! It seems counterintuitive to say the least. After all, how could a recipe that has become so famous have its beginnings be so pedestrian at best? From the original Eggs Benedict at the Waldorf Astoria in Manhattan, Boston Cream Pie at the Parker House on School St. (the Parker House Rolls are amazing, however), to the original hamburger that is credited to Louis' Lunch in New Haven, Connecticut. Some of my favorite dishes, but certainly not my favorite versions. It's not to say that they're truly bad. Louis' Lunch actually has some of the best pie I've ever had (the current owner's wife makes them) and their potato salad is amazing. It's also a really cool place. But the hamburger itself has been greatly improved upon since Louis' rolled out their first one in 1895. You see that same scene play out in other arenas as well. Music, for example. How many times have you listened to the original version of one of your favorite songs, and wondered how it could have inspired such a wonderful version? Such is the nature of things. The idea is great, but the execution doesn't quite live up to that. And that's why it's so important to align yourself with others. You might have a great idea, but it takes someone else to really bring it to life. Anyone who thinks of themselves as an expert in everything is rarely so much as competent in anything. How does a coffee shop stand out in today's crowded environment? The short answer is: offer something unique, something nobody else in your area is doing, and do it well. ✍ It will get the attention of local and industry press. ✌ It will draw new customers to you. 👌 It will keep customers loyal and coming back. One menu addition I made that accomplished this was coffee soft serve ☕🍦- and it wasn't difficult to do. I bought a used soft serve machine to save money, had it refurbished, and developed a recipe using local milk and cream and our espresso. Some trial and error on the recipe, and it was locked in. Now we had four additional, unique items on the menu: 🍦 Cones 🍨 Cups 🍨 ☕ Affogatos 🥤 Milkshakes (topped with espresso grinds Maldon sea salt flakes) Menu development should happen frequently, seasonally, and whenever you need to boost sales at your coffee bar. Whilst doing a little research for a magazine article I came across an interesting celebration in South Korea that I thought I would share. On Sunday 14th April Koreans will celebrate “Black Day”, where all people that are not in a romantic relationship will mourn (in their words) by wearing black clothing. In addition to this they will gather with fellow singles or families to eat Black bean noodles, a dish that contains soy sauce, pork , onions, cabbage and courgettes. The black bean noodles make your mouth and teeth black to add to the black theme, however I can’t help thinking that such an un attractive look may possibly help them to retain their single status !?. This also brings me to a nice link and to unashamedly announce that my own contribution to the “Singles, Separated and Divorced” in the form of a new "soon to be launched cookbook" will be available as from late April 2024. This cookbook is aimed at delivering tasty restaurant style recipes for the singles community with all dishes based on one portion (delighted to say that not one black noodle can be found amongst its pages!). Instead you will find an eclectic array of dishes pulling inspiration from around the world , such as .....
