The term “quality” has been relegated in recent times to the flat slogans and vanilla mission statements of uninspired marketers. This is unfortunate because, in an age of FOMO, shiny-newness, and the quick-hit, there is a profound yearning for something more essential and timeless and true.
I recently watched the spellbinding documentary "Jiro Dreams of Sushi" (I know I’m late to the party!), and I was entranced by sushi master Jiro Ono’s lifelong devotion to perfecting sushi. Over 60 years, slowly, delicately refining every part of the process—ingredients, preparation, presentation— into 3 Michelin Stars: twenty courses of sushi served over a 20-minute sitting. No other menu items. No apps. No dips. No side orders. Everything served at precisely the right time, temperature and stage in its prep. A level of precision and detail that is maniacal.
For 60 years, Jiro has managed to do one thing exceptionally well. And yet to refer to this as “one thing” seems to miss the mark. His genius? Having the discipline and commitment to slow down. To learn to feel and tune in to the tiny details that quality demands. The art of simplicity is about making the complex simple while still respecting its depth. Here, perhaps, we uncover something approaching the essential core of quality. I’m reminded of Frederick Maitland’s insight: “Simplicity is the end result of long, hard work, not the starting point.”
As a business operator, I’m equally enamoured with Jiro’s ability to develop in his operation (and his people) the values, standards, and touch to recreate this simple magic, night in, night out. For those of us who aren’t operating a 10-seat omakase sushi restaurant, how can we apply this mindset to our pursuits? How can we get clear on precisely what we mean by “quality”? How do we breath life into this noble standard and give it the reverence it deserves, for the sake of our customers, our people, and our business?

Shish taouk or shish tawook is a traditional marinated chicken shish kebab of Ottoman cuisine that later became part of Middle Eastern cuisine. It is widely eaten in the Middle East and Caucasus. A similar dish in Persian cuisine is the traditional jujeh kabab.
