I met Jonathan Carp, the Founder and CEO of Miracle Noodle, almost two years ago and have been excited about their products since! They make very unique, healthy, low-carb (and now higher protein) noodle and rice alternatives that I love. It's always a pleasure to meet Jonathan's mom too, who is likely the most enthusiastic promoter of the brand at their booth :) Here are some notes from our conversation at the Fancy Food Show in New York: About Miracle Noodle: Founded in 2006, Miracle Noodle offers low-calorie, low-carb noodles made from Konjac. They have recently launched another line of noodles using egg whites, which are also less than 1 carb and very high in protein. Most Exciting Moment for Jonathan: Jonathan shared that one of the most exciting moments while building the brand was being mentioned on Dr. Oz, which led to a lot of interest and customers. Another highlight is meeting customers. Just that morning, while in an elevator, a woman vacationing in New York noticed Jonathan's badge and said, "I eat Miracle Noodle all the time." These random, exciting interactions are always memorable. Creative Uses of Miracle Noodle Products: Jonathan has seen people use their products in unique ways, such as incorporating Miracle Rice into breakfast and desserts. Customers have made rice pudding, blended it into smoothies, and even added it to eggs like a frittata. These unusual uses are particularly cool and showcase the versatility of their products. Looking Ahead: Jonathan is most excited about the launch of their new egg white noodles. Unlike the Konjac noodles, which are 97% water and 3% fiber, the egg white noodles are 60% water, 39% egg white, and 1% algae extract. It's a fun and versatile way to get protein into your diet, and there's nothing like it on the market. Later this year, they are planning to introduce another exciting noodle alternative, but details are still under wraps.
