Despite September starting and Autumn on the horizon, the sunshine is set to make an appearance this weekend, so there is no better time to barbecue like a pro! ☀️🍖 Our experts at Cape Herb & Spice have you covered following a recent collaboration with grill king Dan Whittaker, aka Elky of The Smokin' Elk Barbecue School. Here are some top tips for achieving a great barbecue: 👉 Fish on the grill? Slice a lemon and place them on the grill before laying your fish on top. The lemon will infuse the fish with a zesty, citrussy tang and prevent the fish from sticking and crumbling on the heat. 👉 The best way to check if you have cooked steak to peoples liking is with a touch test using a pair of tongs. Rare should remain soft and springy, medium rare should be a little firmer with some resistance, medium should be firm and well done should be very firm with considerable resistance. 👉 If you want to create a simple homemade marinade use a seasoning like Cape Herb & Spice with butter, or an oil that has a high smoke point such as sunflower or sesame. #SeptemberSun #BarbecueTips #CapeHerbandSpice

Clean your gas grill This technique might take longer than 5 minutes depending upon the amount of residue and whether you’ve maintained a “clean” grill. • Just turn it on high, and let the grates get hot (or use this technique when you’re done cooking, while the grill is still hot). • Hold a cut lemon with long-handled tongs, or stick it on the end of a long-handled fork (either way, be careful!). • Dip the lemon into a bowl of salt and then rub it across the grates from front to back. The lemon's acid will cut grease, while the salt is a scrubbing agent. If you’re like us and love a BBQ, you’ll be excited to hear that National BBQ week kicks off today! 🍖 🔥 Whilst BBQs are incredibly fun & tasty, it's important to stay safe. Here are Saeker's Top 10 points for a safe BBQ👇 1) Check your BBQ is in good condition, particularly if you have not used it for some time 2) Consider the location - level ground, away from fences, sheds, overhanging trees & not an enclosed space 3) Consider hand washing facilities – such as running water, liquid soap and paper towels next to the BBQ 4) Manage cross contamination – keep raw and ready to eat foods separate & use colour coded utensils 5) Ensure food is thoroughly cooked – burgers, sausages and chicken are high risk foods, cooking on a BBQ may give different results to cooking in the kitchen, ensure to use a calibrated probe to check food is 75°C at the core and keep records for due diligence 6) Never light a BBQ in an enclosed space 7) Remember to use utensils to handle the BBQ, as the metal can become hot 8) Ensure children & members of the public are kept at a safe distance from the BBQ 9) Make sure the BBQ is fully extinguished when finished 10) Ash should be collected by a metal scoop & placed in a proper metal ash collecting bin with a tightfitting lid #SaferWithSaeker #FoodSafety #NationalBBQWeek
