☀️Fun fact: I love Reese’s peanut butter cups, but they are loaded with 💩. Also, I couldn’t think of a solid name for these, so "Not Reese’s" it is. 🥜 🧈 🍫 First up, stick to all organic ingredients. Check labels to ensure no 💩 in it. Ingredients: - 1 cup peanut butter (any nut butter will do) 🥜 - 1/2 cup cacao powder 🍫 - 1/2 cup coconut oil 🥥 - Maple syrup (to taste) 🍁 - Sea salt (optional, to taste) 🧂 Instructions: 1. Melt coconut oil. 2. Add all other ingredients and mix. 3. Pour into "peanut butter cup molds" (Amazon). 4. Freeze till hardened, then store in the fridge. Enjoy! "Exploring the Art of Fruit Jam Making:An Experimental Journey" During our recent food processing lab session, we had the wonderful chance to explore the processing of mixed fruit jam.Under the expert guidance of our Head of Department,Dr. Sneha Karadbhajne mam at LIT Department of Food Technology Jam means the product prepared from sound, ripe, fresh, dehydrated, frozen or previously packed fruits including fruit juices, fruit pulp, fruit juice concentrate or dry fruit by boiling its pieces or pulp or puree with nutritive sweeteners namely sugar, dextrose, invert sugar or liquid glucose to a suitable consistency. It may also contain fruit pieces and any other ingredients suitable to the products. It may be prepared from any of the suitable fruits, singly or in combination. It shall have the flavour of the original fruit(s) and shall be free from burnt or objectionable flavours and crystallization. The specific requirements for Jam are as follows: 🍎It should be free from crystallisation. Enquire now 🍈The total soluble solids should not be less than 65%. 🍒Jams should be made of not less than 45% of fruit, exclusive of any external sugars. Precision fermentation is widespread amongst plant-based ingredient innovators due to the many advantages it offers. One company in particular that I've been keeping an eye on is Melt&Marble. They're a Swedish-based company who are repurposing yeast. Yeast has been used in food for a thousand years to produce foods such as bread, wines and beers. Now, through strain engineering and selection, they're able to convert natural sugars into fats and can even go as far as to customize fats for specific applications. Another winning product (in my book) from Siete Foods! Kudos to Austin based Siete Foods (Privately owned by the Garza family) for introducing their (of course organic) Blue Corn "Maiz Totopos" Tortilla Chips. So many ingredients/processes that based on my layperson's imperfect knowledge are winners: organic blue corn, avocado oil, and the ancient process of nixmatalization (sort of like fermentation?) -- soaking the kernels in lime before stone grinding. No, unfortunately I am not an investor in Siete even though I wish I were. Having bought these new Siete products from WholeFoods, earlier today and indulged in them after getting home, I broke my normal post-Ramadan routine today by eating another generous portion of these tortilla chips with Siete's delicious (new?) Chipotle flavored dip that is made with olive oil, and that too only an hour ago, after my cutoff time. So, I speed walked and climbed stairs some more, to burn off the extra calories and hope I succeeded. My step count right now is 10,070 steps, good but nor great but with an impressive 41 flights climbed which adds to burning 1,087 move/exercise calories plus I still have at least couple of hours of normal movement time left in the day. Perhaps also time for more squats and planks. While congratulating Siete Foods I would like to keep urging the large food companies to pivot to more healthy products with fewer/no ultra-processed carb, sugar, sodium and chemically created artificial ingredients. C'mon guys, it is time to change! Meanwhile let's cheer Siete and other such companies that keep introducing food products that both taste good and are good for us. #sietefoods #avocadooil #oliveoil #nixmatalization
