Have some veggies that are starting to look a little sad? Don’t waste them! Why not create this delicious ‘fridge-raid’ soup? When we end up with more food than we need, finding ways to reuse it is a great way to prevent excess waste being sent to landfill. Method: STEP 1 Heat the oil in a large pan on a medium heat and cook the onion, carrot and celery until soft, about 10 mins, then add the garlic, thyme and tomato purée. Pour in the stock along with the tomatoes, reduce the heat to low and simmer for 10 mins. STEP 2 Add the cannellini beans, the green veg and potato pieces, along with a generous pinch of seasoning. Cover and simmer for another 15-20 mins or so until the veg is tender and the soup has thickened. Top with some parsley, crumbled feta, olives, chilli flakes (for those who like spice) and a drizzle of extra virgin olive oil. Serve with crusty bread on the side for dunking. The plant-based category has come under a lot of scrutiny lately, with various corners suggesting that the bubble has burst. I can tell you for 100% certainty though where the bubble hasn’t burst. Plant. Yes, it’s fascinating to see what new and innovative meat alternatives are being developed, and I love the science behind some of them, but in the meantime we have under-used, natural, sustainable ingredients hiding in plain sight. Nobody puts baby carrot in the corner! 🥕 We put salad in the center 365 days a year. We want you to do the same, even if just for one day. Nothing here comes as a surprise to you (yes, food industry we’re talking to you 👉). 🌍 The health of the planet and the people living on it is in bad shape and it keeps declining. A big part of the cause, as well as a big part of the solution, is unfortunately and fortunately the same. It’s food. The world needs better food. We (yes, still talking to you food industry) must make better, more nutritious, and sustainable food. And make it available, appetizing, and affordable for the many. The fact that green and plant-based food isn’t the baseline of what is offered today, but merely a side-, or optional offer, is upside down. Green and plant-based can’t be a side thing—it has to be the main thing!! On the 20th of March, we release this year’s Vegocracy Report, packed with insights on how we can create and encourage change on many levels. Catapulting salads, and good food, from the sidelines to the spotlight encapsulates the essence of Picadeli. 🚀 And now we want the rest of you to do the same—even if it’s just for one day!
