Ah, dimenticavo e' pure buonissimo! "The spelt does the knee."🏋♂️ With one season just concluded, we resume our inspection tour of raw materials. Today we are in the Marche region to see our #spelt supply chains.🌾 💪 This plant, which appears very delicate, is actually a born fighter. Much taller than regular wheat, it can reach up to 1.6 meters with an average height of 1.3 meters. 🌄It prefers steep areas over comfortable plains, and risky outskirts over the city where wildlife causes damage. 🐗However, spelt fears nothing. Thanks to its downward-pointing sharp "whiskers," its height, and density, wild boars change their path when they see it! 🌪When it’s not animals but weather conditions like the wind that try to break it, it bends but does not break like regular wheat. It concentrates all its strength and does "the knee," lifting its head from the ground to simplify harvesting and avoid being wasted. ⚗ It is so strong that it is perfect for organic farming, as it practically does not need chemical products to be strong and productive. We have much to learn! Ah, I forgot. It is also delicious! Pedon Group #spelt #italy
