🍎🥗HONEYCRISP SALAD🌰🥗 This gorgeous Honeycrisp Salad is full of flavor and texture, with fresh apple slices, crunchy toasted pecans, chewy dried cranberries, zippy blue cheese, and a tangy-sweet apple cider vinaigrette. It's perfect as a holiday salad, or as part of a regular weeknight dinner! INGREDIENTS ▢ 1/2 cup light vegetable oil, such as sunflower or safflower OR extra-virgin olive oil ▢ 1/4 cup apple cider vinegar ▢ 1/4 cup unsweetened apple juice OR apple cider ▢ 2 to 3 tablespoons honey ▢ 1 tablespoon lemon juice ▢ 1/2 teaspoon salt ▢ Freshly ground black pepper, to taste ▢ 3 medium Honeycrisp apples (about 1 pound), thinly sliced ▢ Juice of 1/2 lemon ▢ 12 ounces salad greens, spring mix, baby spinach, arugula, baby romaine, OR a combo of your favorites ▢ 1 cup pecan halves, toasted or candied ▢ 3/4 cup dried cranberries OR dried cherries ▢ 4 ounces crumbled blue cheese INSTRUCTIONS To prepare Apple Cider Vinaigrette, measure oil, apple cider vinegar, apple juice/cider, honey, lemon juice, salt, and pepper into a mason jar. Tightly screw on lid and shake vigorously until everything is thoroughly combined. Alternatively, you may briskly whisk the ingredients together in a medium bowl, or blend them in a blender or mini food processor. Place apple slices in a large plastic baggie and squeeze the fresh lemon juice (from the lemon half) over them. Close bag and shake to coat. In a large salad bowl, layer salad greens, apple slices, pecans, dried cranberries, and blue cheese. Just before serving, dress with desired amount of Apple Cider Vinaigrette and toss until salad ingredients are evenly coated. Notes You may prep the individual components of this salad ahead of time and then assemble everything just before serving. A day or two ahead of time: Make the vinaigrette and store in the refrigerator. Before using, allow it to come to room temperature and then shake well. Toast the pecans, allow to completely cool, and store in an airtight container. Wash and dry the salad greens (if they're not already washed). A few hours ahead of time on the same day: Cut the apples and shake the slices with a generous amount of lemon juice. Squeeze the air out of the bag and store in the refrigerator until you're ready to assemble the salad. Honeycrisp apples will typically hold their bright color (shaken with lemon juice) for several hours. Other varieties of softer apples (such as Gala) will brown more quickly, so those shouldn't be sliced and shaken with lemon juice until just before serving.

In today’s video of an ongoing series of ‘Cooking with Jake’, we’ll learn one of Jacob Cuthbert, CFP®, CPFA family favourites: Lasagna Style Baked Ziti. Ingredients: ➡️1.25 lbs of lean ground beef ➡️Ricotta cheese (15oz) ➡️1/4 cup parmesan cheese ➡️Diced onion ➡️Frozen spinach (10oz) ➡️Pasta noodles of your choice ➡️Grated provolone and fontinella ➡️Jarred pasta sauce ➡️Minced garlic ➡️Oregano ➡️Salt and Pepper Instructions: ➡️Preheat oven to 400deg. ➡️Boil large pot of water for the pasta noodles. Add noodles to pot once water has boiled. ➡️Chop onions to a medium dice. Mince 2 garlic gloves. ➡️Thaw frozen spinach and strain the excess water. ➡️Heat up a large frying pan, and once hot, add olive oil and fry the chopped onions to a nice translucence color. ➡️Add oregano, salt and pepper, minced garlic. ➡️Add ground beef to same pan with the onions and cook until no longer pink. ➡️Add spices and minced garlic to beef and stir until fragrant. ➡️Add any jarred pasta sauce to the same pan and turn heat down to medium low to simmer for 3-5 minutes. ➡️Strain noodles and add back to the same pot. ➡️Add meat, strained frozen spinach and ricotta cheese to the pot with the noodles and combine well. Once combined, stir in parmesan cheese. ➡️Add noodles to a 9x13 dish and top with grated provolone and fontinella cheese. ➡️Bake for 15 minutes in a preheated oven at 400deg until cheese is nicely browned. Tesco has made massive changes to its fruit and veg aisle with its new Salad Creation stations in larger supermarkets. The new bays, which are being rolled out in stores this week, are divided into three sections - and hope to help punters create their perfect salad. Shoppers will firstly create a base, before selecting a builder and a respective topper. Some of the ingredients you'll find for a base include lettuce and Peashoot Summer Salad, while builder options include Smoked Shredded Beetroot and Extra Large Avocado. The Mirror reports that toppers include dressings like Siracha Honey and Coconut Chilli and Lime. Elsewhere, you can make choices between Sweetheart Lettuce, Grated Carrot, Spring Onions, Zingy Corn Salsa, Chopped Maple Orange and Wholegrain Mustard Dressing, Caesar Dressing, Red Pepper Dressing, Chopped Avocado and Cucumber Dressing, Pepper and Salt Croutons, Garlic and Herb Croutons, Pickled Cucumber Kimchi, Pickled Pink Slaw, Chopped Miso and Orange and Ginger Dressing. #Tesco say that the new initiative is in response to increasing numbers of TikTok users posting photos and videos of their own salad creations. And even better still, Clubcard holders can buy four salad items for the price of three from the new bay in a limited-time offer. Tesco Prepared Salad Buying Manager Emily Hampson, said: "Salads don’t have to be boring! They can be tasty, filling and suitable for many meal occasions. Creamy Potato Soup. Each spoonful of this luscious soup delivers buttery potatoes, sharp cheese, and smoky bacon. Imagine loaded baked potatoes, piled high with sour cream, bacon, cheese, and green onions, but in soup form. https://lnkd.in/gzJjxDJm Serves 6 INGREDIENTS 8 ounces uncooked bacon, chopped 3 tablespoons butter 1 cup chopped yellow onion 3 cloves garlic, minced 1/3 cup all-purpose flour 2 1/2 pounds gold potatoes, peeled and diced, about 6 to 8 potatoes, depending on the size of the potatoes 4 cups chicken broth, or chicken stock 2 cups milk, preferably whole milk 2/3 cup heavy cream Salt and freshly ground black pepper 2/3 cup sour cream 1 cup shredded cheddar cheese, plus more for serving Chopped green onions for serving INSTRUCTIONS Cook the bacon in a large saucepan or Dutch oven over medium heat. Cook until browned and crisp. Using a slotted spoon, transfer the bacon to a plate, reserving 1 tablespoon of the bacon fat in the pan. Add the butter to the pan. When the butter is bubbly, add the onion and cook until tender and caramelized, about 3 to 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the flour and stir to coat. Cook for 30 to 60 seconds, until smooth. Add the potatoes, broth, milk, cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, increase the heat to medium-high and bring to a boil. Cook for 10 to 15 minutes, until the potatoes are fork tender. Reduce the heat to low. Use an immersion blender to puree the soup until you reach the desired consistency. Alternatively, puree the soup in batches in a blender. When using a blender, let the soup cool slightly before pureeing, and then only fill the blender halfway. Pro tip: Cover the top of your blender with a dish towel in case there’s spillover. When the soup is pureed to your liking, fold in the sour cream, cheddar cheese, and most of the bacon, reserving some of the bacon for garnish. Ladle the soup into bowls and top with reserved bacon, cheddar cheese, and green onions. Store leftover soup in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Thaw overnight before reheating in a saucepan over medium heat.
