I 100% agree, the advantage is far greater having the time old traditional expereince and know how of traditional cooking passed down from older chefs. I myslef love the hybrid of old school and gastronomical cooking. It takes and unparalleled flavour profile and marries it with new school niche. The unfortunate part is that if you dont stick to the trends nowadays you fall out the bus, so yes, embrace old school tradition and just give it a face lift - if you have the balls for it! New school chefs should embrace what the old school chefs have to offer because being a chef is alot of self study, research, triel and error.

However, a pressing question arises: Are employers still seeking the expertise of seasoned chefs familiar with these age-old techniques or they preferred a new graduated chefs with no experience knowledge ?
