The real reasons that Japan has the most Michelin starred restaurants in the world are much lesser known. Japan is fundamentally a country founded on high craftsmanship (craftsperson), and that includes Japanese chefs with their attention to minute detail, sensitivity to season and ingredients, and almost zen-like aesthetic in presentation, Michelin-starred or not. The real reasons, however, are the world-class quality of the ingredients that can be found here. Hokkaido is home to the best uni and kombu, for example. yet, very few chefs outside Japan have been able to discover most of these delicacies. Chef Brioza in this article and of course Rene Redzepi know of course, as do the myriad Japanese Kaiseki restaurants all over the country. The land of umami, the newest of basic tastes, is a foodie wonderland just waiting to be discovered.
