Nothing about a farming transition happens in isolation. Food production is so very connected to everything around us. From the health of soil and biodiversity, to the health of each and every one of us; as consumers, as farmers, as communities... We can't ask farmers to support all of this without equal transformation happening within the food system itself. How do we ensure a fair deal for nature and for farmers all at the same time as providing fair access to wonderful food for everybody??! Well it's a complex challenge but one that Serenity Hill and Kirsten Larsen set about tackling when they founded The Open Food Network. That was over a decade ago and today the enterprise continues to expand; supporting fair, local transparent food distribution in over 20 countries. They are showing us the alternative path to our established unforgiving commodity markets and it's empowering food producers and conscious eaters to all be a part of it together. Hello again, #TruthTuesday fans! We’re back to explore another fascinating aspect of the world’s most important natural fiber. Today’s #TRUTH: Cotton doesn't just clothe people around the world — it feeds them, too! The ICAC posted previously about just how amazingly versatile the cotton plant is (https://lnkd.in/dde_SREH), but today we’ll focus specifically on cottonseed oil. Why cottonseed oil? Because it’s delicious, of course. Restaurants make some the tastiest foods on the planet in cottonseed oil — including the cooks at the famous Cafe du Monde in New Orleans, Louisiana. The beignets sold there are considered by many to be the best in the USA — and among the best in the world! And the beignets, served hot and steaming with cafe au lait, are all made with cottonseed oil, which the restaurant has been using for more than 150 years. You can see how beignets are made here: https://lnkd.in/d6_Zf54a ICAC Communications Director Mike McCue tried his hand at using cottonseed oil to make beignets to celebrate World Cotton Day back on October 7, 2022 (he probably should keep his day job … those look a little burnt). But cottonseed oil is more than tasty — it’s a valuable source of revenue for many countries. More than 124,400 tons were exported in the 2022/23 season with a value of nearly $196 million, according to the ICAC Production Data Portal (find it here: https://lnkd.in/dFEjTYTM). In addition to all of the wonderful things cotton does for us — alleviate poverty, rejuvenate the soil, empower women, and sequester carbon, among others — it can even tickle our taste buds. Whether you're brewing beer, propagating mycelium meat alternatives in a bioreactor, or growing plants indoors, the ENVRIONMENT is what allows certain microorganisms to thrive. This guide by the Resource Innovation Institute is a great place to start to ensure as a grower you have the proper HVAC, control your microclimates, and maintain an environment so your plants--not microbial pathogens or contaminants--can thrive.
