A former Treasure Island Job Corps graduate visited the campus recently to present on his upstart baking program. Free training and job placement is provided for aspiring bakers/pastry chefs. Over 20 Treasure Island Job Corps student culinary trainees were in attendance. The Bread Project is now responsible for about 4 Bay Area startups and hosts the kitchen space for dozens more. . . It is truly inspiring to see how Play for Peace methods and activities supported the success of the four-day orientation for the Future Chefs Summer Jobs Program in Boston, USA. By integrating cooperative play and reflection, youth leadership, peace building, and social emotional learning through experiential activities, the program has provided a valuable and enriching experience for the 45 high school participants. Yasmin also brought PFP into the Future Chef staff team building, contributing to team cohesion and facilitation skills development. Staff then carried this new knowledge and Play for Peace core values of cooperation, inclusion, caring, and fun into their work with the teens. I work alongside the head Chef, and as his "Sous Chef" I'm responsible for running the kitchen. I worked with the team to produce and develop a wide variety of dishes for various catering needs.
Coming to the end of my time lecturing. I will miss it, with all the achievements i have done growing the Apprenticeship and conquering the challenges needed. But on to a new chapter. This week we worked on shellfish and we made the classic mussel dish: Moules mariniere & fresh Prawn Tortellini with a Prawn Bisque. commie chef Apprenticeship level 2 5 reason to choose a Apprenticeship 1. For a lot of young African graduates, the key to unlocking a successful career is the opportunity to have hands-on experience that ushers them into the world of work. In 2016 PFS piloted an innovative apprenticeship program to do exactly that! Seven years down the line, we have paired over 160 graduates with food processing companies across Africa. Grace Muchiri graduated college with a BSc in Food Science and Technology. Last year, she was placed as an apprentice in Sagana Nuts, a macadamia-nut processor in Kenya. There, she was immersed in the production and quality departments, where she gained experience in hygiene and food safety management systems. Following her successful apprenticeship, Grace was employed full-time by Sagana Nuts. Her story is one we are proud of and we are happy to see her thrive!

Friday, 14th June 2024; I finally made it Alhamdulillah! I once read that if you go into a baker's kitchen, you'll find that the dough rises better, the yeast ferments perfectly, the place always smells delicious, feels warm and inviting and the very thing that makes the place special is that food is made there. The baker isn't good because they descended from heaven to bake perfect croissants but because they love doing it. Whether you're a technician or a chef or a writer or a designer; you can be anything you want and the very reason that you don't choose a profession isn't that you CAN'T do it. You can be ANYTHING you WANT to be. Throughout the course of this degree, this is one of the most valuable lessons I've learned. You and I can be anything we want to be. Why we succeed in one or maybe two professions is because we love doing it or have some sort of emotional connection to it. That is what hooks us to it. So don't be scared. Failure and rejection should never send you down a spiral of despair, and trust me this is coming from someone who's been down that spiral multiple times, if you don't land that job or that internship or if you don't get that perfect GPA that's a sign that perhaps your calling in elsewhere. Possibly somewhere higher. Believe in yourself. And dive head-on into it. By the time you touch the surface, you'll be someone. #graduation

Day 5 - National Apprenticeship Week Another valued Employer Story from Lyndsey Bath our Employer Engagement Representative Owners- John Higdon and Charley Higdon - My Fine Deli, Glastonbury John currently has two apprentices one commis chef and one hospitality team member. His previous apprentice has now completed their course and has a permanent role working for the business. John wanted to take on apprentices so that he could bring younger people into the industry. Charley (John's Daughter and Co-Owner) has a wealth of knowledge and experience she wants to share and support an apprentice. John said the best thing about employing an apprentice is that they come to work because they want to and not because they have to, they are enthusiastic and eager to be part of the team. He would always offer good apprentices the opportunity to become a permanent member of staff once they qualified. John's advice to other employers is to be aware they need to make time to train and supervise apprentices to get the best from them and not to use them just as cheap labour. John would encourage potential apprentices to find a job that they truly enjoyed, not just something they had to do for money. He also emphasised that having a fresh, informative CV that is relevant to the description in the job advert is an absolute must when applying for vacancies. One of their Apprentices – Ruby Lem – Commis Chef level 2 Ruby started her apprenticeship in July 2023. She chose this path as full-time education wasn’t for her and she wanted to get into the world of work as soon as possible. She has always enjoyed cooking and felt that an apprenticeship would be great as she could learn whilst being hands-on in the kitchen and watching colleagues. A typical day for Ruby is prepping food for the day whilst serving breakfast, and then cooking for lunch service. After this, she will pack away and clean, then write shopping and prep lists ready for the next day. Ruby enjoys all aspects of working in a kitchen particularly prepping ingredients and learning to cook new dishes. One tip she would give people interested in a commis chef apprenticeship is to make sure you manage your time well as there will always be several things you have to do at once. I didn’t feel that 1 year was enough time to gain conviction surrounding what I wanted to pursue professionally post-graduation, particularly because I was an international student coming from India and felt I needed more than 1 year to get acclimated to life in the US.” 2. What’s your advice to prospective applicants? Carlos Ituarte “Lots of applicants have great grades and impressive work experiences, you need to communicate why your story is unique and what elements you can contribute to the larger Baker class that others can’t. Also, as a Baker student, make inroads with firms you might want to work at well before the job applications are released. This way you’ll have someone on the inside who can help bump your application to the top of the stack.” 3. What’s your go-to karaoke song?
