Tokyo, city with most Michelin-starred restaurants for 17th straight year - https://lnkd.in/gBVzaC7W Tokyo is ranked for the 17th consecutive year as the city in the world with the most Michelin stars, with 183 restaurants with this distinction in the 2024 edition of the prestigious gastronomic guide. The latest edition of the Michelin Guide Tokyo, released Tuesday at the National Art Center of Tokyo, leaves the Japanese capital as an international benchmark thanks to its high gastronomic competitiveness, according to Michelin Japan chief Gen Sudo at a press conference. Twelve establishments were given three stars, the highest gastronomic score, among them the French cuisine restaurants Quintessence and Jol Robuchon and the Japanese Kanda. Sushi restaurant Harutaka, whose chef worked at the iconic Sukiyabashi Jiro establishment, was a new entrant in this category. Another 33 restaurants were in the 2-star category, including Den, regular in the lists of the 50 Best in Asia, the Ginza Koju and Tempura Kondo. Another 138 establishments received one star, of which 16 were new entries. The real reasons that Japan has the most Michelin starred restaurants in the world are much lesser known. Japan is fundamentally a country founded on high craftsmanship (craftsperson), and that includes Japanese chefs with their attention to minute detail, sensitivity to season and ingredients, and almost zen-like aesthetic in presentation, Michelin-starred or not. The real reasons, however, are the world-class quality of the ingredients that can be found here. Hokkaido is home to the best uni and kombu, for example. yet, very few chefs outside Japan have been able to discover most of these delicacies. Chef Brioza in this article and of course Rene Redzepi know of course, as do the myriad Japanese Kaiseki restaurants all over the country. The land of umami, the newest of basic tastes, is a foodie wonderland just waiting to be discovered.

Hong Kong is the third-most-expensive city worldwide for dining at Michelin-starred restaurants, according to a recent analysis by Chef's Pencil. The study examined over 3,300 Michelin-starred establishments globally, focusing on the cost of premium dinner tasting menus. The median price of Hong Kong's priciest tasting menus stands at USD 266 (approximately HKD 2,080). Only Copenhagen and Macau surpassed Hong Kong in terms of Michelin dining expenses. Although Hong Kong ranks second globally in terms of Michelin expenses, following Denmark, it also boasts the third-largest number of three-starred restaurants globally, trailing behind Paris and Tokyo. Iceland, Singapore, and the USA complete the top five countries or territories with the highest Michelin expenses. Also in Asia, Vietnam's average Michelin-starred meal costs approximately USD 130 (about HKD 1,106), which is just over half the price of dining in Hong Kong. Here's a fun question for my network: who do you think holds the most Michelin stars in the world? Well, as it turns out, this prestigious honour currently goes to the legendary French chef Alain Ducasse, with an astounding 21 Michelin stars! What an achievement! Interestingly, though, he's not the only chef to boast such numbers. The late Jöel Robuchon, who amassed an incredible 31 stars across his global restaurants, holds the record for most accumulated Michelin stars. While these culinary giants have set the benchmark, I also wanted to point out that the APAC region is not far behind, boasting our own array of stellar chefs who continue to elevate the standards of gastronomy. In Singapore, Chef Tetsuya Wakuda of Waku Ghin has consistently wowed diners with his meticulous craftsmanship and innovative use of ingredients, earning his restaurant two Michelin stars. Over in Tokyo, Chef Seiji Yamamoto of Nihonryori RyuGin, with three Michelin stars, blends traditional Japanese techniques with modern culinary artistry, creating an unforgettable dining experience. Even the late Chef Jöel Robuchon left a significant legacy in the APAC region. His eponymous restaurant in Singapore earned three Michelin stars when the guide first expanded to the country in 2016, inspiring chefs and food lovers alike.
