What Is Green Tea? Like black tea, green tea comes from the plant C. sinensis var. sinensis. The key difference is how it is processed after harvesting. Unlike black tea, which is left to oxidize after harvesting, green tea leaves are quickly steamed, fired, or pan-fried. This prevents oxidation and allows the leaves to retain their fresh green color and delicate flavor. What is the difference between buying tea in loose-leaf or in teabags? Is a teabag tea real tea? What is the quality variation? Come and discover more about a famous curiosity about the world of teas. Influenced by the Americans, teas have been sold in industrialized form for years, through tea bags - bags of fine fabric that carry crushed leaves, ready for infusion. Some of us, however, persist in continuing the loose-leaf tea tradition. And we will explain why. The passion for tea is born out of all its qualities: it is a tasty, aromatic drink, full of nutrients and providing a true sensory experience. All of these aspects are tiny and weakened when industries grind leaves and add preservatives for instant use. “Whole-leaf tea” means tea that’s primarily made up of whole, unbroken leaves. Teabags are usually made from the opposite – low tea grades, such as dust and fannings. Dust and fannings are smaller pieces of tea, so they have a larger surface area than whole leaves. A larger surface area means more opportunities for the essential oils (what makes tea flavourful and aromatic) to evaporate, leaving the tea dull and stale. Freshness can be a major issue with typical teabags for this reason, especially if they are packed in a paper box with paper wrapping. Tea is produced from the Camellia sinensis plant by altering the form and chemical composition of the leaves through a process known as 'processing' or 'manufacturing.' Tea processing involves five main phases, which may be repeated based on the tea variety. Phases include Plucking, Withering, Rolling, Oxidizing, and Drying.
