Have you heard of Torrefacto? It's a distinctive method of roasting coffee beans, popular in countries such as Spain, Paraguay, Portugal, Mexico, Costa Rica, Ecuador, Uruguay, and Argentina. This process involves adding sugar during the roasting stage, which creates a glazed coating on the beans. The added sugar intensifies the Maillard reaction, enhancing the beans' unique flavor. After roasting, these glazed beans are typically blended with regularly roasted beans. This method first emerged in the 1920s as an economical way to preserve coffee, especially to mask the undesirable aromas and tastes of lower-grade Robusta coffee. One notable benefit of the torrefacto roasting method is its impact on antioxidants. The addition of sugar results in a higher production of antioxidant compounds. Studies have shown that both ground and brewed torrefacto coffee exhibit greater antioxidant capacity compared to standard roasts, with reduced pro-oxidant activities. Moreover, espresso extraction methods further amplify the antioxidant activity. Regarding fasting, drinking moderate amounts of very low- or zero-calorie beverages during a fasting window is unlikely to compromise your fast significantly. This includes drinks like black coffee. One cup (240 ml) of black coffee contains about 3 calories and very small amounts of protein, fat, and trace minerals. For most people, the nutrients in 1–2 cups (240–470 ml) of black coffee aren’t enough to initiate a significant metabolic change that would break a fast. Some people say that coffee suppresses your appetite, making it easier to stick with your fast in the long term. However, this claim remains scientifically unproven.
