Well, we can cast our eyes upon some new citrus fruits that are at various stages of acceptance in the United States. Yuzu can be confused as a lemon or lime, there is a noticeable difference in flavor profile. It’s often called out as being herbal and or floral or called a cross between lemon and grapefruit with even mandarins and oranges have been mentioned. Yuzu is heavy in terpenes as you might expect for a citrus fruit. Containing significant amounts of β-ocimene, β-myrcene, γ-terpinene, linalool, α-terpineol and of course limonene, yuzu peel oil might at first blush be confused for a lemon or lime when looking at compositional data. Exploring the Diversity of Tea There is an incredibly wide world of tea out there once you begin to explore beyond more common black and green varieties. Here is a glimpse at a few lesser-known types of tea and what you can expect when you take a sip. Oolong - This partially oxidized tea from China and Taiwan offers a smooth, but complex flavor profile. It often features notes of honey and ripe fruit underscored by a pleasant roasted aroma. High quality oolong can have an almost floral quality. Pu-erh - This fermented tea gets better with age, much like a fine wine. Young Pu-erh tends to be earthy and bitter, while aged versions take on hints of mocha, wood, tobacco, and even camphor. The flavor is strong, raw, and often an acquired taste. White - Made from young tea buds and leaves, white tea often comes across as airy and delicate. It is minimally processed to preserve a fresh, slightly sweet flavor. You may encounter notes of melon, vanilla, honey, and citrus in some white teas. Rooibos - Technically a tisane or herbal tea, South African rooibos carries a distinct reddish hue. It possesses a mild, smooth flavor profile with hints of cinnamon, nuts, honey, and wood. Rooibos is high in antioxidants and completely caffeine-free. While we in the DACH-region use cinnamon traditionally seasonally at Christmas, elsewhere it is an important ingredient in cooking all year round. Today in our Spice Knowledge series we want to talk about where cinnamon comes from, how it is cultivated and harvested. In this little series we talk about all the facts around the different spices to highlight the varieties of our product range. There are many different types of cinnamon, but only very few of them are cultivated for spice production. Ceylon cinnamon originated in Sri Lanka but is now cultivated throughout Southeast Asia. Regardless, only Ceylon cinnamon from Sri Lanka is allowed to be declared as "Ceylon cinnamon" and different places of origin must be declared separately. Cassia cinnamon is mainly cultivated in China. Ceylon cinnamon is the higher quality cinnamon compared to cassia cinnamon. The main difference between the two is the coumarin content, with Ceylon being the variety with the lower content. This is a sign of quality because coumarin can be of high risk for liver problems in children, seniors, and those with pre-existing health conditions. However, there is no need to fear health risks for healthy people if they consume it normally. Cinnamon is mainly known as a cinnamon stick or in ground form. The spice is obtained by drying the bark of the cinnamon trees, which then rolls up into the typical stick shape. If the dried bark is then ground, cinnamon powder is obtained.
