Need something warm and toasty for dinner tonight? This week’s Amy’s Effortless Eats is the combination of two comfort classics, BBQ chicken and a quesadilla. Check it out: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ BBQ Chicken Quesadilla = whole grain tortilla shredded cheddar jack cheese shredded chicken bbq sauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Place a large skillet over medium heat. Toss shredded chicken with just enough barbecue sauce to coat. Layer cheese and chicken on one half of the tortilla. Fold it over and lay in the skillet. Toast on both sides for 2-3 minutes or until golden brown and the cheese is melted. Serve with ranch or extra barbecue sauce.

Been a few odd weeks getting requests to "consult for the consultants". It's feels a bit like being in the movie Inception...what's real anymore. Just yesterday had a brewer reach out. They had been approached to consult on a distillery project, and was unsure how to approach it. When I first started consulting in the brewing industry. I too was feeling my way into things. I was pretty open with clients then (and still am)... If I don't know something I tell people. If I can't help I likely know someone who is able to. For this person starting out. I shared some of the ways I break down the projects into steps. To have a process a client can understand and track. They are reviewing my process, then getting back to me. ➡ Last week two consultants got in touch. Both had very similar ideas, but on different continents. They were looking to discuss bringing me on as a third party to assist on the ideas they had. As being in China with my brewing process and equipment knowledge would speed things up. Plus, having "a person on the ground" is always valuable. I've helped a several consultants over the last year or so. Some of them being beverage consultants. Who some people might envisage are my competition... What I've found is sharing some knowledge or helping with some small tasks. More often or not means people come back to me in the future for possible projects for me to work on. I've not asked them to do this... It like I said if I don't know something, then I maybe know some who does. When I help people, often I become the person with the knowledge. They turn to if they can't do a project themselves. The highest # of impressions for my LinkedIn posts/ articles have been about the craft #BBQ from my backyard (see Facebook "Crazy Earl's Backyard BBQ"). The #SmokedCreamCheese post, for example, has 2400 impressions. Crazy eh? Business Development & Craft BBQ - To date, business dialogue with prospects is accelerated by mentioning the craft BBQ. What is it about food that drives that? It is a bonding experience. It unites us. It brings us to the table and enjoy the moment. My craft backyard BBQ does generate "sales" solely for the food; it does, however, drive the bigger opportunities with my business (No More Carbon USA). The photo is of a recent "experiment" with brisket. The bottom was brined for two weeks to make "tsunami #brisket pastrami." The top is traditional salt & pepper "Texas Brisket." When this photo is shared (possibly along with #ColdSmokedSalmon, smoked cream cheese, #chickenthighs, etc.) there is a "closeness" that develops immediately. Right now I am brining 35# of brisket for the same 2 weeks. Contact me to get some of this today or preorder. All food is vacuum sealed (great for longevity & presentation). PS Shredded pastrami is amazing as it mixes the long muscle fibers with the yummy rub (brown sugar, ground espresso coffee, etc.) & the muscular fat. Comments are always OMG.
