Every piece of equipment (open and closed) considered for certification must be evaluated by one of the EHEDG Authorised Evaluation Officers (AEOs), at one of the EHEDG Authorised Testing Laboratories (ATLs). The labs are in active exchange with each other, but usually only online. Once a year, a visit to one of the facilities takes place to discuss the tests performance in depth, as well as to interpret their results. This year it was Germany's turn, with the Fraunhofer Institute for Process Engineering and Packaging IVV research institute in Dresden and the Research Center Weihenstephan for Brewing and Food Quality in Freising/Munich. To stay ahead of the game, we maintain a strong culture of sharing across our group of companies. We have several formats that help us share developments, challenges and success stories among our colleagues in Germany and around the world.ย One of these formats, initiated by Dr. Lutz Popper many years ago and still held annually, is our Global Flour Application Days. This week we all came together again for a two-day hybrid workshop. The first day was devoted to theory and the second to practical trials and tastings.ย The topics presented by our various global teams were diverse and highly scientific: Concentrated gluten replacer, a fresh-keeping and glucose oxidase roadmap, solutions for sugar replacement, pasta improvers for composite flour and so much more. This format is truly an incubator of knowledge that we'd like you to benefit from.
