I wanted to ask the doctor who posted this "Did you read this whole thing? It doesn't seem like a piece against processed food to me..." This is often the case when looking at ultra-processing of food stuffs. We do need to remember it is also an issue with equity as well since these foods are actually more readily available in lower income places where food insecurity and hunger are an everyday actuality for families. The Nestle boat is such a shameful thing and I am not surprised!?! The truth is, for most of our existence food has always been consumed thru processing of some sort and there is a theory that our ability to make fire and cook is why we are the species we are. We need some form of processing to make food safe to consume (soaking beans, for example) and digestible. However, ultra-processing is not necessary and, unlike what this author suggests, not the solution for famine. Perhaps in some cases, jars of peanut butter are shelf stable for long periods and nutritious, but not when it comes to breakfast cereal or treats. It was a great piece; I do recommend reading it in its entirety. He makes great arguments. But we evolved eating MOSTLY unprocessed foods and therefore, our metabolism responds in such a way that these foods promote the most health and longevity. We have not yet adapted to this way of living and right now, it hurts us more than it helps us, IF we are lucky to live long enough. Believe me, people regret a lifetime of junk food when they are dying at 50 and 60-years-old and there is no hope for them aside from surgery after surgery! According to traditional western medicine, anyway. Is that fair? Should we pretend these foods are "OK", in moderation? And then never define what moderation really is? Moderation is likely individual, too, as each body has different metabolic challenges. It can be the case that culinary developments do not match human or planetary health needs, and even comes with a significant assault to our ethical and spiritual lives in the form of animal abuse; have you ever heard of foie gras? Have you seen conventional animal "farms" which are just prisons for those whose rights we have stripped away because we feel entitled to do so? So, the author's argument that the art of culinary creation is as important as the health ramifications is just false. This is the same thought process that has led to massive animal abuses in the name of medical research. This is NOT a necessary way to live, so why do we excuse it? Even when it hurts our children, our planet, and all the species that deserve a place here just as much as we do. I will stop, because I can go on and on about the issue.
