Though really, this is such an adaptable dish that it can be made with any vegetable suitable for braising. Add those that can withstand a 30-minute braising time in the beginning, and faster-cooking vegetables (like green beans and asparagus) towards the end. White wine – Any white wine that’s not too woody or sweet will work great here. Chardonnay in particular adds really good flavor. Substitute with more low-sodium chicken stock/broth for a non-alcoholic version. Chicken stock/broth – This dish is extremely tasty and made with regular store-bought chicken stock. But it becomes a restaurant-quality treat if you make it with homemade chicken stock! Homemade chicken stock is straightforward to make and really worth it for the added deliciousness. (Bonus: It’s lower in sodium than store bought and you get extra nutrients from the bones). Flour – Used to lightly thicken the sauce. Here's a quick and delightful recipe that's both delicious and nutritious: the kale and parmesan quesadilla. With just three simple ingredients, this dish is a fantastic blend of flavors. It's a fuss-free meal that packs a punch in taste and nutrients, perfect for those busy days when you crave something easy yet satisfying. Ingredients: 1 cup of kale leaves, thinly sliced 1 gluten free tortilla (10 inches) 1½ ounces shredded Parmesan Salt and pepper to taste Instructions: Heat a medium skillet over medium heat. Add kale and 2 tablespoons water. Season with salt and pepper. Cook, stirring, until the kale is wilted and water has evaporated. Remove from heat. Spread cooked kale over half the tortilla, then top with Parmesan. Fold the tortilla over. Wipe out skillet, place over medium-low heat and add filled tortilla. Cook until cheese is melted and tortilla is golden brown on both sides, 3 minutes per side. Another #FoodieFriday, another delicious recipe to try! 🍴✨ Repost From Arash Hashemi: MEDITERRANEAN ROASTED CARROTS This is one of those dishes that will make you fall in love with eating your veggies. If you’re super low-carb, feel free to use squash. And if you aren’t watching carbs too closely, this would be amazing with sweet potatoes, too. You can serve this as an appetizer, as a warm salad of sorts, or even devour it as a main. You do you. Here is how I made it: 1. Start by washing and peeling 6-8 medium carrots. Cut them into thirds, then cut those in half. Add to a bowl. 2. Drizzle about 2 tbsp olive oil over the carrots. Season with a couple pinches of salt, pepper, 1 tbsp paprika, 1/2 tbsp garlic powder, 1 tbsp thyme (or oregano), and 1 tsp cumin. Mix well. 3. Lay the carrots out on a baking tray or dish, making sure they are not overly crowded. Optional: drizzle with a little more olive oil. 4. Roast in the oven at 400F for 35-40 mins. Time varies by oven, so keep an eye on it. You can flip them at the end and roast the other side for another 5 mins. 5. To make the yogurt feta sauce, grab a mixing bowl. Add 1 cup thick plain yogurt, crumble about 1.5 to 2 ounces feta, drizzle with 1 tbsp olive oil, add 1 tsp Aleppo pepper, and season with salt. Mix, taste, and adjust. 6. Spread the sauce on the bottom of a serving plate. Top with carrots, and top with 1/2 cubed avocado, a handful of finely chopped pistachios, 2 tbsp fresh finely chopped parsley, 1 tbsp fresh finely chopped mint, some Aleppo pepper flakes, feta crumbles, then squeeze some lime juice. This is one of the most delicious foods. It is because my grandma used to make it and its basically mashed potato mixed with flour and deep fried.
