The good news for all companies out there that develop open food processing equipment because ETH has started to offer EHR certification services for these types of components. And there's also a published a new EH guideline on the topic of hygienic design requirements for open a process equipment used in a wet cleaned food processing areas. And with us today is the Chairman of the working group. That developed this new edge guideline and his name is Doctor Giampaolo Beta and he's calling in from Italy. Great to see you. Thank you very much Rob Giampaolo. The title of this new EH guideline document hygienic design criteria for equipment used in wet cleaned open food processing environments. It's a long title. Does it reflect the importance of this document? Open processing is very important and it is widely used for. Umm, sometimes for very critical products in terms of food safety. So it is very important to improve this guideline with more detailed requirement. Now another aspect of the scope of this guideline is that it has to support and underline the new EH open process equipment certification scheme. Can you tell us a bit about that relationship between the guideline and the certification? HDG has developed a new test method, so. The next month that we we start certifying open equipment using this new testing method. So we needed a new guideline to be consistent with this new certification scheme. So. The main the main objective is to have a. Framework guideline where we can then refer to other more specific guidance and to the OPC test methods. Inline processes are often cleaned by automated CIP systems, whereas open process food process lines are cleaned in many different ways. How did you approach that variable in the guideline? There are quite huge differences between open processing and closed processing. For example, one difference is 1 difference is about leak detection because. When we have a closed system and it leaks. We see the leakage from the outside, so it's relatively easy to detect. But when we have a leakage from the exposed area to the inside, we cannot see and this can be a source of contamination for products. So this is quite tricky topic and we have a dedicated chapter for leak detection, hollow areas, etcetera. Now this indeed comes across as a framework type of edge guideline. That is probably related to other guidelines as well. How did you start out approaching designing the structure of this guideline and how is it related to other edge guideline documents? So we started from document 8, which is the most general guide, and then try to expand each requirement in the specific area of open process. So if you go through the guideline you first find several section regarding the main hazards we can have info processing so we discussed. And how we can, how we can prevent hazards, different hazards in the specific area of open processing. So physical hazards, chemical hazards, microbiological hazards. And based on this concept, we developed minimum requirements and we try to make those requirements as general as possible to make them applicable to. Almost all various processes and products. Could you share an example from this guideline that illustrates the inherent differences between designing open food processing and inline food processing components in such a way that food safety is guaranteed? So in this specific case, we show the top rings. And we compare two different strategies. Open profile and close profile and both of them may have advantages. Mainly, we know that when you have a closed profile there is a risk of. A system not really sealed, so a risk of liquid coming inside and so microbial growth and and then risk of contamination. So this picture is intended also to show that you have two different strategies to get to the same result with different risks. Open profile can be different, can can can have different shapes and of course we have to. Focus on drain ability and cleanability, So we must choose the best shape to maximize accessibility for cleaning and for inspection and drain ability.
