I was recently watching MasterChef The Professionals UK where the final 3 chefs visited Alchemist in Copenhagen and were put through their paces by chef-owner Rasmus Munk.
I was amazed by how Alchemist is trying to revolutionise the entire restaurant experience:
🥗 His restaurant doesn’t have dishes, instead it has impressions.
📽 Dinner is divided into acts and set across several locations.
📔 Each impression has a story; from edible plastic to a chocolate bar shaped like a coffin.
For me, this is the height of innovation and something all companies should strive for – redefine your industry and challenge established norms. It’s challenging, and the less trodden path of innovation will always be the risky (and often uncomfortable) way to go. But if successful then you can create something extremely special.
Woodhurst have always championed a flat hierarchy which encourages our employees to do more than they’d traditionally be able to do at larger more hierarchical companies. Yesterday, we launched our new structure and career development framework which will provide the guardrails for our employees to develop at pace within their careers.
I’m not going to pretend that we’re revolutionising the industry like Rasmus has at Alchemist. However, we like to think about things differently and challenge the status quo which is what we’ve done with this approach.

Tonight’s dinner got me thinking…
The process of making chapatti dough has a great resemblance to teamwork!
> Each ingredient (flour, water, salt) brings something unique, just like team members with their skills & experiences.
> Mixing & kneading the dough represents how the team combines strengths to overcome challenges.
> Letting the dough rest is similar to the team’s strategic breaks to regroup and return even stronger.
> Rolling out to its final form reflects how the team works together to refine and finalize the project.
> Finally, cooking the chapatti is no less than presenting the finished outcome of the teamwork.

Grainger…..for the ones who get it done! Yes that is their slogan used in their TV ad campaign. Has anyone caught the version that shows a bakery making hot dog buns and a maintenance man solving problems with Grainger solutions? It ran during the March Madness and still can be seen.
This post isn’t about Grainger and their solutions. This is about the fact that bakery was used on TV, in prime time. When is the industry….ABA, ASB, BEMA and AIB going to hook onto something like this and run an industry campaign about the glamours of bakery life and career.
We have talked about labor issues and talent levels being short across the board. What has the industry done about that? How has industry been promoted to those who don’t know? Yes certain companies do a nice job promoting careers in their own market, but industry wide we don’t see a lot that goes out to general public. When do we have a Got Milk style campaign?
“Bread is Life, and Career”……something along those lines.
The industry has the money, the brains, and the resources……Let’s do this!!!!

Innovation - Experience, Science, Teamwork, Trial and Error, and Execution
When I built Big Kahuna Donuts the mission to set out to make all natural, non-gmo, no preservatives, and no high fructose corn syrup based donuts that rivaled the best tasting donuts that has all these ingredients was actually a very difficult task. As most donuts are artificially flavored, have preservatives, and use high fructose corn syrup for their glaze and fillings.
I hired Les who is one of the foremost donut experts in the U.S. He said he has never created a donut line based on my all natural donut parameters at Big Kahuna Donuts. His knowledge behind the science of donuts is outstanding.
It took a year of planning and 3 weeks of live training to perfect our donut line when it would only take 1 week for most shops to create the donut line and train the Teams. But, it was worth it.
He had worked out the difficulties of making our donuts all natural, built the processes and recipes, and trained up my donut chefs. Excellent work.
Our first year we opened Big Kahuna Donuts was ranked in the top 3 donut shops in Austin on Yelp and our Google reviews were outstanding.
The lessons of that experience carry me today in my career and how I approach projects, teamwork, collaboration, and innovation.
