Coffee roasting. There are a couple of guidelines we like to follow. One, you can’t roast good flavour into bad green coffee. Sourcing incredible green coffee is our obsession: building relationships with producers, tasting dozens of samples every season, finance, logistics and then sharing our expression of an incredible coffee. Two, it’s easy to turn green coffee brown but it’s a bit more difficult to to do it well. Nevermind to do it exceptionally. Exceptional is our focus. Three, coffee roasting is our main thing. Always keep the main thing the main thing.

ROASTERS: WHY PRE-HEATING Depending on where you are roasting, or what time of year it is, your equipment’s temperature will naturally fluctuate. Setting out a preheating routine will help you ensure consistency when roasting a few batches. Always preheat your equipment before roasting. This allows for better consistency when you charge the roaster with green coffee, and you can be sure the temperature reading you’re getting is the actual temperature of the roaster. When roasters aren’t preheated, the heat can [end up being] unevenly distributed. THANKS.

TURNING POINT (TP) Imagine you're roasting coffee beans, you're in charge of the roasting process. At the beginning of the roast, the coffee beans are like a group of sleepy, Grammy people in the morning. They haven't had their coffee yet, and they're all cried up, pale, and not very interesting. This stage is called the "Drying Phase". Now, as you continue to roast them, there comes a point where something magical happens - the turning point ! it's like the moment when you give those grumpy people a cup of coffee. Suddenly, they start to wake up, stretch, and become more vibrant and full of life. In coffee roasting, the turning point is the moment when the beans go through a crucial transition. They start to change color from green to brown. So, picture yourself standing there with your coffee beans, and you witness this turning point. it's like you've just told a hilarious joke, 😂 and the beans are laughing 😃 their way into becoming delicious coffee. They go from being sleepy and boring to lively and flavourful- just like people after that first sip of morning coffee. The Turning Point in coffee roasting, where the actual temperature is increasing and the beans will match the drum temperature. Discover the evolution of coffee roasting with four-time Norwegian Coffee Roasting Champion Simo Kristidhi! Since 2004 at Solberg & Hansen, one of the world‘s largest specialty coffee roasters, Simo has been sharing his experience. The so-called Third Wave of the specialty coffee scene brought with it a variety of new technologies and systems. Roasting machines became more technically sophisticated and were therefore able to provide reliable and meaningful data with regard to the roasting process. Simo emphasizes the importance of the rate of rise (RoR) during roasting. For Simo, RoR is the key to controlling roasting profiles. When exchanging profiles, he prefers RoR values because they show roasting processes better. His goal? To create roasting profiles based on RoR target values.
