Must Have Healthy Enchiladas
2 boneless skinless chicken breasts, cooked and shredded
1 cup cooked brown rice
1 can chili or refried beans
1/2 cup salsa
6 whole wheat tortillas
1 cup fat-free cottage cheese
1 can enchilada sauce
1/2 pepper (any color)
1 large jalapeno, sliced w/ seeds
1/2 red onion
Directions:
1. In a large bowl mix chicken, rice, beans, salsa, cottage cheese, peppers, jalapeno, and red onions.
2. Divide equally between 6 tortillas and place in sprayed baking dish.
3. Top with enchilada sauce, cover with foil. Place in oven for 30 minutes, uncover for 15 additional minutes. Serve with lettuce, tomato, avocado, and salsa.
