Delicious flavors of biscuits and dried apple in the finish. Special character to this because of the very ripe vintage. Disgorged in November 2021. This is half Chardonnay and half Pinot Noir. Why do we need different glasses for Champagne? 🥂 Known as flute glasses, the glasses for Champagne have an elongated and narrow bowl that not only preserves the bubbles but also allows them to rise vertically making the mousse look ample and luxuriant. Earlywood, rich in phenols and tannins, contributes to the structural backbone of wines and spirits. In contrast, latewood, with its fibrous nature, possesses a different aromatic profile. Barrels crafted from "fine-grained" or slowly grown oak, with a higher proportion of latewood, are expected to contribute more to the structural complexity of beverages, creating a refined and intricate flavor profile.
