A different take on the term “LIGHT” product in the bakery... The term “LIGHT” is sometimes used to describe low-calorie foods as well as products with reduced functions. But “Pick-By-Light LIGHT” is really absurd. This week I visited many bakeries and saw exactly that, a kind of light pick-by-light! What sense does it make to still print piles of paper for dispatching with a paperless (!!) picking system? Just to save the displays, i.e. the “lights” of pick-by-light? The task of trying to be the best of the best means you need to bring your ‘A’ game and the spin off is the bar goes up. The quality goes up, the service goes up, and the sales go up. It becomes a race to the top instead of a race to the bottom. It is pretty straightforward to work out which race is being run too. Just look at the direction and shape of capital and investment. Is it going into innovation and the customer experience or is it going into cost cutting and production efficiency? They are two quite distinctly different approaches. Of course, a key advantage of business models like the one featured is their marketing system is likely to be equitable across the entire channel too. In this world, the farmers win, the retailers win, and the red meat consumer certainly wins. In such a system, the value created on-farm by the farmer remains intact across the entire channel. The value to the consumer is amplified because of the story and the value captured is maximised and shared equitably across the system. Ultimately, this type of approach becomes cultural and it’s the subliminal nuances of culture that help companies build valuable export brands. And ask yourself, have you ever had a bad meal or a bad coffee in Melbourne or Sydney? I haven’t. Why? Good food and great service is the minimum required for profitable survival. You serve up rubbish, you’re out of business very quickly. So, awesome work G. McBean Family butchers.
