Microorganisms have different strategies to cope with saline environments and these impact how carboxylates are produced in a fermentation. In this just published paper, which is part of the CONSERVAL Poctep project, we show that the VFA produced change with the salt concentration. Recently, we used the membrane process for a different purpose. As you know, tannin is one of the undesirable components in gums. We tried to use Microfiltration and Ultrafiltration processes to remove tannin in Persian gum solution. This was done in the thesis of Mrs. Anahita Akbarzadeh. The following article, published in the Journal of Food Science and Technology, shows the results of this research.
