Se c'è qualcuno che può essere definito il custode della nostra ricetta e l’artefice della nostra Birra questo è Uwe Eichert, 59 anni Mastro Birraio in Menabrea da 25 anni. Tedesco, originario della Foresta Nera al confine con la Svizzera si è formato all’ Università di Monaco e specializzato presso il corso promosso dalla Weihenstephan, che è sinonimo di Birra in tutto il mondo, appassionato di corsa in montagna, Uwe entra in Menabrea e si stabilisce a Biella nel 1999 con Paolo Thedy, padre di Franco Thedy.
“Quando sono entrato era un altro mondo, si faceva tutto a mano, anche riempire i fusti. Ma quello che mi ha spinto a restare è stata la promessa che tutto sarebbe cambiato in meglio, e dopo tutti questi anni devo dire che è stata una promessa mantenuta” “Allora si producevano 60.000 ettolitri all’anno ma erano produzioni instabili, oggi siamo a 294.000 ettolitri e la qualità è sempre ottima, il prodotto è migliorato”.
Il lavoro di un mastro birraio parte dalla selezione delle materie prime e segue tutte le fasi della produzione, dalla custodia della ricetta, alla cotta, dalla fermentazione, alla maturazione, agli assaggi, alle prove di laboratorio fino all’imbottigliamento senza tralasciare la formazione del personale. Oggi la sua birra preferita è la 150° Bionda “perchè ha le caratteristiche che io apprezzo il gusto di una vera lager, freschezza, bevibilità e aroma”.

'Back then we produced 60,000 hectolitres a year but they were unstable productions, today we are at 294,000 hectolitres and the quality is still excellent, the product has improved.
The work of a master brewer starts with the selection of raw materials and follows all the stages of production, from keeping the recipe, to brewing, fermentation, maturation, tasting, laboratory tests and bottling, without neglecting staff training.
Today his favourite beer is the 150° Bionda "because it has the characteristics that I appreciate the taste of a real lager, freshness, drinkability and aroma".
