An interesting in some ways surprising recall. Quoting from their site “French’s® Crispy Fried Onions are made with only carefully sourced, whole yellow globe onions, not from by-products, to deliver an exceptional texture and craveable flavor. Our fresh onions are fried in trans-fat-free oil, immediately after cutting to maintain their natural sweetness and pungency.” This product is generally quite dry and used for sprinkling on salads etc. And tasty they are indeed. Processing is most likely at least semi continuous Raw material will be standardised for dry matter within practical agriculturally achievable limits for the onion variety favoured as will the final product which after frying will have lost moisture and have been at least partially caramalises dehydrated and the sugars concentrated. S. aureus will grow at temperatures as low as 44.6°F (7°C) and at a water activity as low as 0.83 . Shelf life will be based on these parameters as well as chemical parameters affecting oxidation of residual fats and other potential alterations over time. Although it depends on what else the factory produces, the onion raw materials should be at little risk in themselves from S aureus contamination. So without all details its difficult to tell whether the recall is because of detected S aureus contamination or potential for growth and whether this recall is entirely self generated or FDA motivated based on water activity and potential for a growth hazard. All the same I would be considering the activities going on in the lab, the other materials being examined at the same time and thus the possibility of a lab cross contamination. Together with the cleaning regimes. Human contamination of plant particularly for greasy materials can lead to S aureus growth in residues. S aureus grows very rapidly in materials containing phospholipids like lecithin.
