    Spotlight on Functional Ingredients at IFT FIRST 2024! Functional ingredients were prominently featured this year at IFT FIRST, reflecting a growing trend toward holistic health and wellness. From protein- and fiber-rich foods to innovative prebiotics and probiotics, the interpretations of functionality varied significantly among exhibitors. Key observations include a focus on prebiotics and probiotics, which are becoming essential as weight management and digestive health remain top concerns for consumers. Additionally, there was a focus on functional mushrooms such as Ashwagandha and Lion's Mane, which are receiving mainstream attention for their numerous health benefits. Compared to last year's IFT FIRST, the conversation around plant-based products has certainly shifted, and we are seeing new plant protein bases such as chickpea and soy gaining traction. Brands like CoffeeMate and Vizzy are allowing consumers to enjoy a flavor they loved as kids in new, more grown-up formats, such as in their coffee and hard seltzers. But Orange Cream's appeal goes beyond just nostalgia. It also taps into the growing popularity of indulgent and dessert-inspired flavors. The rich and creamy textures, combined with the vibrant taste of orange, offer a welcome escape from everyday stress. Consumers are seeking moments of indulgence, and Orange Cream delivers a delightful sensory experience that transports them back to simpler times.

    Shark Week returns to the Discovery Channel for its 36th consecutive year! In July, Discovery devotes its late-night programming to shark-related content. The popular event consistently draws significant viewership and prompts food and beverage tie-ins. For their 2023 premiere, Discovery partnered with Minute Maid and Crumbl Cookies to offer limited-edition treats. Continuing this trend in 2024, Discovery has teamed up with Playa Bowls and Georgetown Cupcakes. Playa Bowls has created a custom acai bowl inspired by Shark Week, while Georgetown Cupcakes has designed a special set of shark-themed cupcakes. These exclusive products aim to capture the essence of Shark Week and provide fans with unique, themed treats. Shark Week is inspiring brands even if they aren't partnered with Discovery. BIGGBY Coffee, for instance, has introduced Shark Bite Crème Freeze to add to Shark Week's fun and frenzy. These collaborations and themed products enhance the Shark Week experience and highlight the event's widespread popularity. Fans eagerly anticipate these unique offerings, often featuring sweet, fruity, and tropical flavors like Blue Raspberry. Many tie-ins include gummy sharks, adding a playful, nostalgic touch.

    Beyond ingredients and desired flavors, the way different cultures view coffee varies. Take Italy, for instance, where espresso is king. Within the country, many view espresso as a social ritual as much as a pick-me-up. The coffee culture is much more disciplined with Italians, typically reserving milkier coffees such as lattes and cappuccinos for the mornings, while stronger brews such as espresso are enjoyed in the afternoon, usually after lunch.   In the States, espresso has not penetrated the coffee landscape as much as abroad. This is reflected in home brewing habits, with espresso machines ranking only fourth in popularity.     Local ingredients and flavors play a big role in shaping how coffee is enjoyed around the world. In Mexico, for example, true cinnamon reigns supreme, starring in regional drinks like tepache and hot chocolate. This spice, boasting a delicate sweetness and floral notes, is a ubiquitous presence in Mexican cuisine.  The traditional coffee drink in Mexico is the café de olla, a spiced coffee made with true Mexican cinnamon, cloves, and unrefined cane sugar, or piloncillo. This traditional Mexican coffee is typically brewed in a clay pot, which enhances its warm, aromatic flavor.   The use of a clay pot ties back to pre-colonial Mexico, connecting the modern coffee experience to the country's rich cultural tapestry.     In recent years, espresso martinis have been experiencing an unprecedented surge in popularity! This caffeinated cocktail is the perfect pick-me-up for consumers.  Among younger demographics, espresso martinis tap into the existing love affair with cold brew coffee.  Espresso martinis offer a way to enjoy that familiar coffee taste with a boozy twist.  Mixologists are also exploring savory variations, such as the Parmesan Espresso Martini, creating unexpected flavor combinations. This experimentation shows that the espresso martini renaissance is more than just a fad – it can be a platform for further innovation.  This trend is not only confined to the bars. According to BEVNET, sales of ready-to-drink espresso martinis have skyrocketed by 252% in the past year.
