Kicking off with our first “Dine with Fabio” series in 2024. Last week's menu featured an all-vegan spread, except the Pizzoccheri, which was vegetarian but boasted an incredible alpine cheese from a small production artisan. We not only celebrated the most flavorful winter ingredients but also delved into the benefits of some of the most unknown and underrated winter ingredients and dishes — all plant-based! Plant-based eating has transcended being merely a trend; it has become a lifestyle, a philosophy, a way of living in harmony with our planet and nature. Chefs and the food industry everywhere have attempted to replicate meat and fish-based dishes. But the answer has always been right before our eyes: ancient grains. Thanks to our Chef Fabio.

Last week, we invited Eny Lee Parker to curate a new artist showcase called 'Pretty Secrets' in collaboration with Spring Place. The exhibition - hosted at #SpringStudios New York - offered a unique glimpse into the material worlds of seven emerging designers who expertly blend traditional furniture-making techniques and styles to infuse a fresh vitality into craftsmanship in today's context. The show marked the launch of a new residency series at Spring, created to provide artists with a platform to spotlight their talents and creations. Congratulations to Eny and the artists involved - Angelina Pei, Cat Love, Jia Xin Huang, Izzy Yang, Madeleine Young, Maggie Pei and Sarah Holloway.
