ProStart is a two-year career and technical education program that focuses on teaching culinary arts and restaurant management fundamentals. The program reaches nearly 140,000 high school students throughout the United States, Guam and Department of Defense Education Activity schools in Europe and the Pacific.

Learning from seasoned chefs is invaluable—they bring years of experience, wisdom, and techniques that can’t be found in textbooks, passing down culinary traditions and tips that shape the next generation of great chefs. 👨🍳 Bonita High School and San Dimas High School ProStart students were chosen to learn from and prep with Shabu Shabu Chef Yoshi! Students learned about common staple ingredients in Japanese cuisine, traditional recipes using those ingredients, modernized traditional cooking techniques, and how to utilize the latest energy-efficient equipment. Students were given hands-on work experience prepping, demo-ing, and learning in the seminar. These educators are kicking off the week in the mile high city by diving into workshop sessions to outline the ProStart Professional Development Summer Institute set to take place next summer!

The skills learned in the ProStart Program are the foundation for a successful industry career! 🙌 Chef Brother Luck is a former Colorado ProStart student, Top Chef alumni, and the chef/owner of Four by Brother Luck and ELEVEN18 in Colorado Springs. Brother started his culinary journey in a high school vocational program, which provided him with education, mentorship, confidence, and the ability to pursue a higher education. Colorado ProStart high school students from Odyssey Early College and Career Options (Odyssey) worked with Brother to create 1,500 bites for this year’s Denver Food Wine Festival Grand Tasting. Before the event, Brother visited Odyssey to provide a master class on the bites they’d serve together during the festival and gave stellar career advice to aspiring chefs.
