Green Gone White! Our asparagus experiment is a success! We blocked the sun & look what happened! Regular green asparagus gets its color from chlorophyll, which develops when exposed to sunlight. In our experiment, the box blocked the sunlight, preventing chlorophyll production. This results in the asparagus spears staying white and tender. White asparagus is more expensive and is called “white gold” because growing it requires more labor. Farmers need to mound soil around the asparagus or use special covers to keep out the sun. The white asparagus season is much shorter than green asparagus because it takes constant effort to keep the spears from reaching the sunlight. And white asparagus is considered a delicacy due to its milder flavor and rarity. Compared to the US, white asparagus holds a more prominent role in Europe's culinary scene, particularly in Germany for a few reasons: Tradition and Taste: European cultures, especially Germany, have a long tradition of enjoying white asparagus. The milder flavor and unique texture are considered a delicacy. Climate: Europe's cooler climate compared to some parts of the US is more conducive to growing white asparagus. Because the mulch is black, light is not transmitted through the plastic, so weeds will not grow under the material. Soil temperature increases by 3-5 degrees F under the mulch at 2 to 6 inches of soil depth. This is the area of greatest root growth early in the season.
