From the kitchen of Alyssa Stern, Account Director for Boston, is her signature Colombian dish: Arroz con Pollo. Growing up, Alyssa and her family often connected in the kitchen, preparing delicious dishes that celebrated their Colombian roots. Arroz con Pollo, in particular, was a favorite—a simple, flavorful recipe that reflects the richness of their heritage. This dish is a reliable crowd-pleaser, perfect for sharing with family and friends. Curious how to make it yourself? Try the recipe below! INGREDIENTES: 2 tablespoons olive oil ¼ cup chopped onion 1 garlic clove minced ¼ cup chopped red bell pepper ¼ cup chopped green pepper 1 cup long-grain white rice 1 tablespoon tomato paste 1 chicken bouillon tablet 2 ½ cup chicken stock ½ tablespoon Sazon Goya ¼ cup chopped fresh cilantro ½ cup frozen peas ½ cup frozen diced carrots ½ cup frozen diced green beans 1 lb chicken breast PREPARACIÓN: Place the chicken breast in water. Bring to a boil, cover and reduce the heat to medium low. Cook for 20 to 25 minutes. Turn the heat off and let the chicken rest in the pot for about 15 minutes covered. Let it cool, shred and set aside. Strain stock and measure 2 ½ cups and set aside. In a medium pot, heat the olive oil over medium-high heat. Add the onions, green peppers, garlic and red bell pepper. Cook until the onions are translucent, about 4 to 5 minutes. Add the rice, tomato paste, chicken bouillon and sazon goya. Stir until the rice is well coated about 3 minutes. Add the chicken stock and bring to a boil. Then reduce the heat to low. Cover and simmer for about 15 minutes. 🎊🍴To celebrate Hispanic Heritage Month this year, we're spotlighting five cherished recipes and family traditions featured in the cookbook curated by our Vamos! ERG. First up? Verduras en Escabeche is a Mexican dish and culinary favorite of our very own Chief People Officer, Natalie Ackerman. She loves the colors and versatility of this dish. This specific recipe is from Australian Women’s Weekly Easy Mexican Style Cookery, a magazine that she’s held onto for over 20 years because it reminds her of family dinners with her husband and children. Talk about nostalgic. 🇲🇽 ❤️🧡💛 Verduras en Escabeche INGREDIENTES MARINATED VEGETABLES 1 fresh corn cob 1 medium red pepper, roasted, peeled 200g green beans, halved 10 halved baby yellow squash 8 baby potatoes, halved 1¾cups (215g) frozen peas 1 bunch (about 15) radishes ¼ cup chopped fresh coriander DRESSING ½ cup (125ml) olive oil 1 medium onion, finely chopped 2 cloves garlic, crushed 2 small fresh red chilies, seeded, finely chopped ½ teaspoon ground cumin ¼ cup (60ml) white wine vinegar 1 teaspoon grated lime rind 2 tablespoons lime juice 2 tablespoons chopped fresh oregano PREPARACIÓN Cut pepper into thin strips. Cut kernels from corn cob. Boil, steam or microwave corn, beans, squash, potatoes and peas separately until just tender; drain. Rinse under cold water; drain. Add radishes to a pan of boiling water, return to boil; drain immediately. Rinse under cold water, drain. Combine vegetables in bowl, pour over dressing, stir in coriander, mix well. Cover, refrigerate 1 hour Dressing: Heat oil in pan, add onion, garlic, chilies and cumin, cook, stirring, until onion is soft; cool.
