12 years ago, I stepped off a plane onto the beautiful island of Kauai, ready to start a new chapter in my life. I had accepted the position of Executive Pastry Chef at the The St. Regis Princeville Resort, an iconic resort that promised to be both a challenge and an adventure. There was just one small catch: I didn't speak a word of English. Those early days were tough. Every day was a struggle to communicate, to understand, and definitely to be understood. But I poured everything I had into my work. Over time, I learned to navigate not just the kitchen, but also the new culture and language. The St. Regis became my home, and its team members, my family. Fast forward to today, and I find myself back in the garden island, but under very different circumstances. The resort has since undergone a major renovation and rebranding under 1 Hotels, and let me tell you, what a stunning property it is! I am no longer just a pastry chef. I am an entrepreneur, the founder of Incrementum, a company committed to the noble pursuit of making a difference in people's lives, teaching about serving one another and putting people first...and I speak English too! Returning to my former resort in this new capacity is a full-circle moment for me. It’s a testament to how much can change and how much growth can occur over a decade. Walking through the familiar yet newly designed halls, I am filled with memories of my early days and find myself reconnecting with team members that I worked with and some of them that I hired several years ago and still here. As I assist the resort in this new chapter of its story, I am reminded of my own journey. From a newcomer who could barely communicate, to an entrepreneur whose work now speaks volumes. It’s a story of resilience, relentless growth, and the incredible possibilities that can unfold when you dare to dream big.
