Fresh Zucchini Foil Packs
A neighbor just gifted Vrghr some lovely fresh zucchini squash from their garden. Wuff took those over to a friend's house and with a bit of "pantry searching" put together some delicious foil packs for their supper.
These were ultra-easy to create. Very quick. Created nearly zero clean up needs. And were totally delish. Also VERY inexpensive.
Basically, wuff just distributed all the ingredients between 4 large strips of foils that had been sprayed with cooking spray to stop things from sticking. There was enough filling that Vrghr could have even made 5 of these.
Wuff and his friend finished one of them for supper. The other 3 will be put up for future meals, meaning wuff's friend has 6-8 more servings of these.
That's 10 servings for less than 10$ total, or under 1$ each. Try to do that on today's economy! *grin*
As said, this was a "see what's in your pantry and go for it" creation, so feel free to do the same at your home and create your own variation of these. You may be surprised at just how good a simple creation like this can taste!
INGREDIENTS:
2 med-large garden Zucchini (about 4-5 lbs total)
1 large onion, diced (about 2 cups)
1 can RoTel original Diced Tomatoes & Chilies
1/2 of 10oz bag (5 oz) prepared Shredded Carrots
5 small Russet Potatoes
1 pkg (13 oz) Smoked Polish Sausage
1 stick Butter
Your favorite mixed spice seasoning (Italian, Southwest, BBQ, etc.) to taste
Lowrey's Seasoned Salt & Pepper to taste
Cooking spray
DIRECTIONS:
Preheat oven to 375F
Wash the potatoes and poke each one several times with a fork. Microwave 8-10 minutes (depending on size) until tender & fluffy in the middle
When the potatoes are done, cut them into approximately 1/2 in wedges (wuff left the skins on his)
Wash the zucchini and trim off the stem and blossom end. Cut into wedges about 3/4 inch thick
Peel and dice the onion
Drain the liquid from the can of Rotel tomatoes
Slice up the sausage in to 1/4-3/8 in "coins"
Cut the stick of butter into pats about 1/4 in thick
Tear off 4-5 strips of heavy foil, about 2 ft long. Spray one side of each with cooking spray
On each strip:
- Sprinkle a layer of shredded carrot next to the foil, topped with the diced onion.
- Add the chunks of zucchini on top of that
- Divide the Rotel tomatoes evenly over top of that
- Distribute the chunks of potatoes evenly between the packs
- Divide the sausage evenly and spread on top layer
- Distribute 3-4 pats of butter on top of each packet of veggies
- Sprinkle lightly with your desired seasoning mix, seasoned salt, and ground black pepper
Wrap up the foil and seal the top seam and ends. If needed, wrap additional layer of foil around that to make sure nothing leaks
Place packs in the oven and bake for 45 minutes
Remove and unwrap. You can eat these right out of the foil, or distribute the contents to plates for each guest. Taste and adjust seasoning as desired
!DEVOUR!
OPTIONAL: You can sprinkle grated cheese on these when you open them up to let their heat melt the cheese in
You can also grill these. If you do, flip them over a few times to make sure everything cooks top to bottom
Get creative here! Sub chicken, beef, etc., for the sausage. Add cooked pasta (mac elbows?) for more body. Come up with your own mix of ingredients! These are so easy and good!
You can wrap the foil packs in plastic wrap to freeze them, or break them down into individual servings for later meals

Gotta love foil pouch meals, even with the mixed health concerns over cooking with the stuff. Then again as I understand it so long as you're keeping the temperatures below 400F and not going too acidic, you'll be fine. ^.==.^

Regardless, these are REALLY tasty and quick. And if someone really has issues with foil touching their food, they could always wrap things in parchment paper instead, or first. *smiles*

Yar, I figure the only real potential for the foil vs everything else is being literally surrounded in aluminum. Other than that, we use it daily and our bodies can deal with it just fine. ^.==.^
This looks pretty tasty. Especially with the fresh veggies.
The looks didn't lie. *grin* They were really tasty, light, and fresh!
First learned foil packs in scouts. Always a great option in the summer. Double-up the foil if placing directly on coals.
That's where this wuff discovered them too! Great! Go Scouting! And a very good tip!
Wuff loved little "burger pack" versions:
- Make a thick burger patty, seasoned up as you like
- Butter up a slice of foil and put down a layer of canned sliced potatoes
- A a couple slices of onion on top of those and add a pat of butter & a sprinkle of salt & pepper
- Add your seasoned burger patty and wrap everything up tight (2 layers!)
Freeze it all solid overnight, then wrap the frozen package in a few layers of newspaper as insulation
The frozen pack helps keeps your foods cooler when you pack things out, and you can use the paper as tinder to get the fire started. Then just toss in the thawed foil pack and devour it out of the foil when it's done. YUMMY!
Ah, the memories. So tasty, and such fun!
