Sliced up nice n presented like this for the Bistro I worked at :>
Cajun Seasoning
1 tablespoon crushed red peppers (optional)
3 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons Italian seasoning
2 tablespoons Salt (optional)
1 tablespoon cayenne pepper
1 tablespoon dried thyme
1 tablespoon onion powder
Pork Loin Preparation
Rub pork loin vigorously with the Cajun seasoning
Sear all sides of the poor loin then put into a metal pan, (I steamed my pork loin by covering the pan tightly in cling wrap and steamed for about 1-1.5 hours)
I know not everyone has a steamer (most people don't) but you could also cover the pan tightly with tinfoil and bake for about 1-2 hours @ 350 F (or until it reaches an internal temperature of 155) let it rest for about 15 minuets and slice

I just happen to have a nice pork loin in the freezer. Will give this a try next weekend! :)
I've got (rough-)sliced pork chops, boneless (I think). And I believe I have all the seasonings (rats. Ok, next weekend for the crushed peppers). buuuut... can this arrangement be done on a BBQ grill?
the crushed peppers are optional if you dont mind it having a little less spice kick to it :3
and sure! boneless pork chops are most likely loin chops (if you didnt de-bone them yourself that is)
but since they are pre sliced i would just use the cajun seasoning as regular flavoring instead of a rub

I finally made this tonight and it was SO good.
I was afraid I had burned the seasonings when I seared the roast, but after an hour and thirty minutes in a roasting bag it was perfectly cooked, juicy and delicious!
