it's been a while, but yes, I have still been doing some cooking! Did some "Mennonite Comfort food" with perogies, fried ham and Schmaunfatt (cream gravy).

~FILLER INGREDIENTS~
1 small tub dry cottage cheese
1 egg
Salt & Pepper (to taste)
~DOUGH INGREDIENTS~
3 cups flour
1/2 cup Margarine
1 pinch salt
3/4 cup water
~OTHER INGREDIENTS~
1 small honey ham
Strawberry jam
Pot of water
pinch of salt
1/8 cup Shortening
~STEPS~
- combine egg, salt & pepper with cottage cheese. Mix thoroughly and set aside
-combine flour, margarine, pinch of salt & water by hand to make dough. Slowly add extra water to mix completely.
-roll out dough till about 1-2 inch thickness (or as thick as you want)
- use mug to cut into circles. Place 1 tsp of stuffing on dough circles.
- fold over and pinched close to make a little fin to keep them sealed
-boil water, add pinch of salt and place perogie into boiling water for 4 minutes/until float to the top
- scoop put with a strainer spoon and place into glass tray (lightly non stick sprayed) with small chunks of butter.
-slice small honey ham and fry in a pan with Shortening (crisco works great) until darker red but not burnt/hard like bacon.
-remove ham from pan, set aside
-pour cream into pan of pork grease, add salt & pepper to taste. Stir occasionally so doesn't stick to pan.
-let gravy boil for 4 minutes/ until golden brown.
- plate ham slices, plate 4 perogies. Add tsp of strawberry jam across each perogie as garnish. Pour gravy over perogies, serve.

About.....I'd have to say about 8 servings of 4 each. My family takes like 6 at a time and thats usually enough for all 5 of us to have seconds with like 2 extra on the side.
Appreciate it! That gives me an idea on the size of the recipe I'd need to make...
