Emberflame is not someone who likes to fight. The more you prod her about Ninetales ranking on Smogon, which she's probably never heard of anyway, the more annoyed she'll get. Prod her enough, and she'll accept the challenge... only to then swallow all of your team members and enjoy gaining more HP EVs.
The little icons in the top left are not indicative of life or death, only that they've been gurgled already for those that are blackened and crossed out. Think Pokemon Stadium.
Also continuing the ongoing trend of Ember eating things she probably shouldn't be able to, like Garchomp, and things she loves eating specifically, like Fairy-types and eeveelutions. Yum.
I do enjoy pokemon competitive from time to time, but it can get bothersome when people only look at pokemon through the lens of their competitive viability. Sure, Pokemon are just pixels and data on a screen, but human empathy and conscious allows us to breathe life into what is not alive or even sentient. It's a wonderful feeling.
And yes, Ember is in fact laying on her tails like a bed.

Pretty sure Azumarill is the only one with HP EVs but as long as they're tasty i suppose. Personally I choose pokemon mostly for their appearance and lore :3

I haven't played competitive in a while since there are timer exploits in Sw/Sh, but when I did it was always with unconventional strategies. I get bored too easily using the same pokemon everyone else does and actually perform worse. It turns out some of my strategies became popular like snarl Arcanine.
