This recipe is still a work in progress, but I am VERY happy with the peanut butter filling. Right now the Ganache is staying soft even a few hours in the fridge, leaving them very messy to eat (Not that I don't mind licking chocolate off fingers, but leaves transporting them anywhere more difficult.) I currently have them in the freezer after three hours in the fridge to see if that'll harden them up very nicely.
Was very easy to make though and extremely tasty. I've snacked on way to many test subjects of these already...
This was inspired via a peanut butter "Buckeye" (I believe they were called) given to me by crssafox at Ancient City Con that she had gotten from someone. Extremely tasty sweet and I thought "Hey, I could make something like that." And while I could have done it with just regular melted chocolate, I LOVE the flavor of ganache so much.
You know, this would probably work great with Nutella as well... that would be epic.
These are like a reeses peanut butter cup, but in a ball form, and a little messy.

Chocolate covered Peanut Butter Balls.
The Coating (Ganache).
3 Tbsp Butter
1/2 cup heavy cream (For a firmer setup of the chocolate omit or lessen the cream.)
1 1/2 cup semi sweet chips (Or your favorite chocolate type.)
Using a double boiler (A double boiler is where you have a metal bowl that fits on top of a bot with some water that you bring to a simmer. Try not to boil the water as that's often to hot for chocolate, a simmer at best.) Melt the butter, Cream, and chocolate all together, stirring until smooth. Keep heat on low to keep chocolate soft without getting to hot.
While the chocolate is melting you can prepare the peanut butter filling.
3 Tbsp Melted butter
1 1/2 cups powdered sugar
1 1/2 cups creamy peanut butter (Or you could use chunky if you want some more texture.)
Combine all ingredients together using a stiff spoon. The texture should be of a fairly soft dough that isn't to sticky to the touch.
Coating:
Take 1 tbsp of the Peanut butter filling and roll it into a small ball. Gently put the ball into the melted chocolate (I find putting a few in at a time is fine, but work quickly.)
Use two forks, one to gently roll and flip the ball and then the two to gently lift out of the chocolate. Place on a parchment lined sheet pan or plate that is of a size it can fit in your refrigerator or freezer.
Once all are done chill for two to three hours to have a soft set ball. Freeze for several hours to have a firmer set chocolate. These can be messy, but a little messy chocolate is fun, right? \
