Vrghr's (Virgin) Silk Eggnog
While wuff was out cooking up the Christmas Feast at his friend's house, Vrghr found out that they were short of eggnog. Only a bit of a little carton left. Needless to say, nothing was open on Christmas day, to go buying more.
Friend said, can you just make it? Wuffy had never made a "real" eggnog before. But it couldn't be that hard, could it?
Well, of course Vrghr had to make do with what was in the pantry at the friend's house, since wuff hadn't brought the makings for nog with him. And since the house was full of non-drinkers, this would be an alcohol-free version.
Well, it ended up a bit more specialized than that, too. Since the house only had "Silk" instead of regular milk. But the result was VERY good! Rich, thick, foamy, creamy, and delicious! And really not that tough to make!
Wuff used an immersion blender with a whisk attachment to whip this up. Took less than 10 minutes. And, to wuff's taste, beat the store-bought 'nog all to bits!
Ingredients:
~1 qt Silk vanilla soy milk
1 can Sweetened Condensed Milk
1/2 C Heavy Cream
4 eggs, yolk and whites separated
2 whole eggs
1 Tbs 2 tsp granulated Sugar
1 tsp 1/2 tsp Vanilla
~1/2 tsp ground Cinnamon
~1/8 tsp ground Cloves
~1/8 tsp ground Allspice
>> wuff recommends ~1/4 tsp nutmeg instead of the Allspice, but we had none in the house
Canned whipped cream and a sprinkle of nutmeg (or cinnamon) for garnish (optional)
Tools: Immersion blender w/whisk attachment, or hand mixer
Directions:
Separate 4 eggs into yolks and whites. Being careful to get NONE of the yolk into the whites, place the whites in a very clean, chilled medium bowl.
Add 2 tsp sugar and whisk vigorously until the eggs begin to froth and foam. Add 1/2 tsp Vanilla extract, and continue to beat until the egg whites are really foamy and starting to just stiffen a bit.
Set aside in a cool spot
In a large bowl, add the 4 yolks and the 2 whole eggs. Add 1 Tbs sugar and 1 tsp vanilla extract
Whisk vigorously until the yolks begin to lighten slightly and there is no variation in color
Add the heavy cream, sweetened condensed milk, and the rest of the spices. Continue to whisk/beat vigorously. When the mixture thickens a bit, begin drizzling in the Silk while continuing to whisk/beat.
Thoroughly incorporate the mixture and taste. Keep adding Silk until the mixture reaches the desired flavor as it incorporates the spices, yolks, sugar, etc., into the milk.
Add the whipped egg whites to the mixture and fold them in until everything is frothy.
Chill, if desired.
Add to glasses. Spritz a bit of whipped cream on top, and sprinkle with a dash of nutmeg or cinnamon
*GUZZLE* (Okay, it's a drink, see? So you can't DEVOUR this! *grin*)

I have made a number of things using the Silk Soymilk and adding coolwhip instead of the cream. I'm a heathen I know... But even the small amount of actual cream would make me have stomach issues these days...

Lactose issues are no laughing matter! At least you can use the coolwhip and still have nice flavors!
Yup! That is a metal bendy-straw! It doesn't actually bend though - just crafted to look as if it does.

Definitely! Wuff thought the store-bought 'nog was okay, but this surpasses it by a long shot. Not bad at all for a first try! *grins*
Never seen much non-dairy eggnog drinks before! It looks amazing!
It really does look nice in a tall glass, when the froth separates out a little and layers the drink!

Wasn't wuff's intention to go non-dairy, but that's all the homeowner of the place wuff was cooking had. So Vrghr sorta did one of those "chopped challenges" and tried to make a 'nog with what was "in the basket". Or, in this case, in their pantry and fridge! *grin*

Thank you! It definitely was. Very rich though - a treat to be enjoyed on special occasions unless one wants a surprise next time one steps on a scale. *chuckles*

Can't patent a recipe, or even copyright one. Just the instruction text that goes with the ingredients. But folks are free to use the ingredients to re-create the dish (or drink) and even re-publish those as long as they don't copy down the text parts word for word.
That's one reason you can find so many "copy cat" recipes on the web, for things like Red Lobster's "Cheddar Bay" biscuits, or KFC Chicken spices.
Besides, wuff gets more happiness out of folks enjoying his creations, than making profits from them. *hugs*
