Supporting establishments to balance their menus to become 50% plant-based by December 2025, through support, industry collaboration, advice and sharing inspiration. Inspired by industry - wagamama, IKEA and even Burger King have already pledged; we want to help others harness the business upsides for taking steps to increase their plant-based options and of course, lower their environmental impact in doing so. A Viva! initiative, this environmentally focused campaign will help the UK hospitality industry embrace more healthy and sustainable food options whilst honouring our planet, wildlife and nature.

    Ignore consumer desires at your peril! 🧐 “The latest driver in consumer spending? Climate change. That’s according to the latest findings from Kroger data partner 84.51˚ which reveals that more than half of U.S. shoppers are concerned about climate change. Furthermore, 19% of shoppers say they frequently seek out sustainable products and 22% of shoppers find sustainability very important when choosing which products to purchase. Reinforcing this notion is a slew of data from and new research by Innova Market Insights. Consumers in the U.S. and Canada say that they are willing to pay more for products that practice eco-friendly sustainability and ethics in their development, packaging, and sale of products, particularly around animal cruelty and ocean pollution. Consumers also think about how plant-based diets impact the environment and say they want more plant-based meal options.     Exciting News! New Evidence Supporting The Link Between Good Food and A good mood 🌱 🌟 A new paper published in Nature reveals powerful additional co-benefits of the EAT-Lancet diet. Switching to the #PlanetaryHealthDiet not only lowers the risks of type 2 diabetes, ischemic heart disease, stroke, and all-cause mortality, and can cut food-associated greenhouse gas emissions by up to 50% and land use by up to 62%: In this new study of 180,446 participants over 11.62 years, researchers found that high adherence to the EAT-Lancet diet significantly reduces the risks of depression, anxiety, and their co-occurrence. In short, this healthy flexitarian whole-food dietary pattern not only benefits physical human health and environmental sustainability but also supports mental health, likely by reducing inflammation and promoting a healthy gut microbiome.     You can't be an environmentalist and eat meat. You can't be an environmentalist and fly. You can't be an environmentalist and use plastic. You can't be an environmentalist and use fossil-based energy. You can't be an environmentalist and drive, even an EV. You can't be an environmentalist and ... You can't be an environmentalist. If being perfect is the only way, we will not make any progress. Many well-meaning people advocate for absolutes because they believe so strongly in their cause. I admire and share much of that passion. And yet, blaming or shaming people for making incremental and imperfect change is entirely unproductive. Climate activists, environmentalists, and advocates live and work in modern society; therefore, they are not perfect. Let's not waste our time looking for perfection, but instead celebrate and elevate progress and those working their hearts out to make it happen. #climate #climatechange #activism #environment

    A new low. 🤦♀️ Chips and salad.🍟🥗 In a VERY popular, well known pub. In London’s buzzy Soho. This was all they could muster for me for lunch yesterday. In promoting 50by25, I’ve been so impressed to see how much progress is being made by the bigger pub and restaurant chains to balance their menus so they offer more plant based options. Because let’s not forget, plant based options: ✅ Are more gender inclusive (80% of vegans are women) ♻️ Are more sustainable 🥚 Are friend to those with allergies to eggs and lactose (largely BIPOC) 💚 Are healthier … and most crucially right now, MORE PROFITABLE!! 💰 If the likes of wagamama , Wahaca , IKEA , and even Burger King can commit to 50% plant based, everyone can! 🍔 Independents and mid-tier operators need to wake up to the climate realities of the future we face and become more sustainable.     The impact of food, agriculture, and land use on the planet is staggering. Here are some facts: - The global food system uses 38% of the world's land -- and 29% for animal agriculture alone. - That makes it the largest user of land by far (about 50x more than urban areas) and the biggest driver of habitat loss and biodiversity decline. - It consumes 70% of our global freshwater use -- all for irrigation. - It is also the biggest source of water pollution, mainly from fertilizer runoff of nitrogen and phosphorus. - And it releases 22-34% of the world's greenhouse gases. (22% directly from food production. Or 34% if you include the larger food system impacts, like landfills, and food processing, cooking, refrigeration, and transport.)     This is watermelon rind. And this is how to make money with it: 1.) Peel off the outer dark green skin and compost it. 2.) Use the rind in your recipes. Green gazpacho. Tzatziki. Pakoras. Röstis. Veggie soups. Bhajis. Salads, pickles, ferments, salsas, jams, chutneys, the list goes on. You can do SO MANY things with watermelon rind. Think about it as a squash/cucumber. It's one of the most under-utilized products. It's also ~15% of the weight of the watermelon. That means that it costs us money to buy that rind. Don't put your money in the bin. Make more money with it by using it in your kitchen. It's not a by-product, it's a product. The last photo shows a watermelon rind salsa. There is no need for a specific recipe. Use a bunch of aromatic herbs, shallot, good quality oil and seasoning and it's done. Easy peasy. Food belongs to the plate, not in the bin. #foodwaste #zerowaste #chefs #hotels

    From everything I've seen we really don't need to worry about the health impacts of plant-based ultra-processed foods (UPFs). Some of the reporting on them last week was very poor. Here is a good reaction from scientists: https://lnkd.in/efyx7v24 To add to that: 🥗 Previous work suggests that there are no increased cancer or cardiometabolic risks associated with plant-based UPFs.
