Willy’s Apple Cider Vinegar with 'The Mother' is made from 48 wild apple varieties grown in our 300-year-old organic orchards. Varieties include Broxwood Foxwhelp and Collington Big Bitters. It’s raw, live, unfiltered and unpasteurised, keeping in tact the many benefits ‘The Mother’ has to offer. Our Apple Cider Vinegar is a labour of love. First, we harvest our apples from the orchards surrounding the farm. They’re pressed and fermented into a gorgeous, golden unfiltered cider. With the help of some fresh Herefordshire air the cider is naturally fermented into Apple Cider Vinegar (ACV). This natural transformation also creates ‘The Mother’, strands of gut-friendly probiotic bacteria that makes our ACV cloudy and ‘cobwebby’. Our Mother is alive and full of goodness in each bottle. And that’s it. No fertilisers or pesticides. Nothing added, nothing removed – 100% natural. Often referred to as the ‘Mother of natural remedies’, Willy’s is giving this traditional cupboard staple a modern twist, encouraging people to enjoy it as a daily dose or as a versatile ingredient when cooking. You can also now enjoy a daily dose of Apple Cider Vinegar in drink form with Willy’s Natural Apple and ACV drinks in 250ml cans, as well as convenient ready-to-drink 60ml health shots.     🌻 REGENERATIVE/ ORGANIC FARMING 🌻 Regenerative Farming is at the heart of everything I do at Willy's ACV - Probiotic Live Foods. I’m pleased to see that the #regen movement is spreading fast, from the USA to Australia and throughout Europe. Back at home on Mother Farm we have now finally moved all of our farm - our arable cereals and pulses - over to organic regen. I would love to share the findings with anybody who is interested as we intend to sell all our products on their nutritional value and taste, rather than their cosmetic looks. I’ve learned a lot - can you grow potatoes regeneratively by not moving the soil?! 🥔 I’d never have thought that I would have been doing this 10 years ago as a conventional farmer; I have learnt so much more about the benefits of nutrient dense foods compared to mass produced, ultra processed, nutrient-free, bland, supermarket food. I’m now thinking all farmers -nutritionists - food processors - governments, should start rating our food for its nutritional value and not just as a commodity - this would prove the value of feeding the soil. Nutrient rich foods are depleting; I’m told there is now 60% less microbiome in our soil and subsequently our guts, than there was 80 years ago. Another thing I’ve learnt is if we eat food that was around over 80 years ago, we’ll be fine; in other words, no UPF processes or fast food, take-away or convenience foods.   EUREKA MOMENT! ☀️ If you’ve not tried it, I’d love to send you a sample!     Hello! I’m writing this as I make my way back from Australia, following my 4th export mission in Oz, alongside the government’s UK Trade and Investment team.   My first trip was in 1992 when I was looking at becoming a cotton farmer in NSW before starting Tyrrells potato chips, then making vodka and gin as Chase Distillery in 2008.   With the latest brand, Willy's ACV - Probiotic Live Foods, I’ve been looking for another home down under; every time I visit it gets more inspiring, especially Melbourne, which is still my favourite city in the world for new inspiring food trends. We visited the new Amazon distribution centre for NSW and were told about a fantastic surge in Independents and online healthy retailers. The health food landscape is fast changing - more so than the rest of the world but it will be a long time before people give up UPFs. But it IS happening, with larger retailers such as Woolworths, Coles and even Aldi assigning designated space for organic and gluten free, plant-based milks, and some even questioning the reported nutritional benefits of seed oils. I have found most of my inspiration for global food trends and ideas whilst travelling the world on export missions. It was always my original mission with Tyrrells crisps - then Chase Spirits and now Willy’s ACV - to get listed globally. I have always preferred working with small, independent partners, rather than big paid partners, so have built many friends around the world this way. It’s given me a great broad view into the whole world’s food habits – especially now, in this new world of healthy living foods. Good gut health is a fast-growing space, globally. For example, fun fact "FHACT": Did you know that Brussels sprouts, roasted cauliflower and beetroot have become the hottest side dishes at trendy restaurants everywhere? They've even knocked avocados off their pedestal! I hope this has been of interest; it’s more of a summary of the last 22 years than an autumn farm fermenting newsletter, refraining from talking about the weather 🌦️ or awards, or facts and figure. It’s a simple summary of where we are, as we all need each other to trade and build our businesses as I thank all of you for supporting us over the last 22 years from fresh potatoes to Tyrrells chips to Chase vodka - gin - whisky!     Just got back from the Groundswell festival, we're so inspired! ✨ It was amazing to meet so many people who have huge love for our soil and the environment. We learned so much, from insect monitoring to soil profiles. 🐝 Claire Carvell from CEH shared that there are 24 bumblebee species, 250 solitary bee species, and just 1 honeybee! 🪱 ADAS BOB here with soil profiles showing the effects of soil acidity and how our soil was created by the ice age from minerals and deposits from other continents. 🦠 We all have so much to learn about our soil and bees from the soil microbiome through to our gut microbiome! 🍏 Willy William Chase Willy's ACV - Probiotic Live Foods #SharingStories #WillysFHacks #WillysWeeklyWaffle
